Flour de sel or fleur de sel is a salty fleur de sel that crystallizes as a thick, thin crust on the exposed surface of seawater when it evaporates rapidly. Fleur de sels are collected from all areas of the planet except the Dead Sea. It is typically harvested from the foothills of the Alps and is obtained through hydrofractification with salt. It has the same texture as table salt. It was commonly used as both a cleansing and as an antiseptic during medieval times. It was used in tablet preparations, as well as being ground into a powder and mixed with water to make a thick paste for washing the feet.
Flour de sel can also be obtained from sea salt mines in several countries around the world. The best fleur de sel sources include Russia (plus a few in Canada), France, Germany, Ireland, Norway, Spain, Greece, the Netherlands, Canada, Australia, Switzerland, Poland, India, Chile, China, South Africa, the United States, Norway, New Zealand, Pakistan, Thailand, Malaysia, Philippines, Vietnam, and Indonesia. You can find this type of salt in most grocery stores or health food stores. In addition to regular table salt, you can also purchase iodine tablets from iodine distributors or other salt retailers.
Seawater along the shores of western Atlantic Ocean regions and Mediterranean Sea provides brine for fish production and an assortment of marine vegetation including seaweed. Atlantic waters are rich in magnesium, sulfur, and potassium. In areas where there are deep cracks in the rock like those found in California, saltwater along the coasts can percolate down and reach the deeper levels of the ocean. This provides nutrients like sulfur to help grow plants like chlorophyll. Fishes tend to feed on it as well.
In the southern hemisphere, marsh croc beds on the ocean floor provide a source of fleur de sel. They can also be harvested as their shells are still soft. They come in a variety of colors, from white, green, brown, black, blue, purple, gold, silver, and tan. This is an especially popular salt for use in French cooking and baking recipes. However, it is not harvested on a large scale in the southern United States and Canada.
In addition to the fleur de sel and marsh croc, there are other sea salts that are mined for their mineral content. In Labrador, Canada, for example, the Liardin-Perthes Salt Mine deposits were discovered in 1930. Today this salt is used for mining magnesium sulfate and potassium chloride. The mine is closed to the public, but tours are available. Many minerals other than sodium and chloride are mined in salt mines like this around the world.
Many minerals including iron, chromium, manganese, aluminum, titanium, zinc, and ironstone are also found in sea salts. Their distribution in the environment is largely dependent on their concentration in the water, their location, and the type of rocks that they are mined in. Limestone and dolomite, for example, make up most of the iron mineral content. High quality fleur de sel and marsh croc salt mines in Mediterranean countries and Western Europe provide a wide variety of minerals from which to choose.
Fleur de sels and marsh croc salts are great for both table salt and as table salt alternative for cooking. As a seasoning for meats, the salty taste of the mineral salts can add a rich flavor to any meal, or as a garnish to help bring out the natural flavor of the meats. They are an excellent alternative to regular salt, as they retain less of the saltier minerals. For those who prefer a more subtle taste in their food, fleur de sel and marsh croc salts are an excellent choice for seasoning and as alternatives to regular table salt.
