Ethiopia is often referred to as the birthplace of coffee. The story goes that a goat herder named Kaldi noticed that his flock became more energetic after eating red berries that were growing in a nearby plant home. He tried the berries and realized that they gave him a lot of energy. The herder then spread the berry with his family and this was how coffee first became popular.

The coffee that is grown in the Yirgacheffe region of Sidamo in Ethiopia is usually processed with water, or "washed." This process helps to eliminate bitter flavors and produces a bright, clean taste. In the middle of 2000, global coffee prices rose to unsustainable levels, which impacted many farmers in Ethiopia. The Yirgacheffe Coffee Farmers Cooperative Union was able to keep the farmers in business by making them bargain on the market and taking fair trade initiatives. This helped to usher in a wave of fruit-flavored single-origin Ethiopian coffees that are referred to as the "new naturals." Today the world is once again enjoying the distinctive, floral, and citrusy taste of the Yirgacheffe bean.

Geisha

Geisha is one of the most expensive coffee beans around the globe. It has a delicate tea-like taste with hints of mango, peach and raspberry. It also has a delicate taste that is similar to black tea. But does it really deserve the price price?

A British consul came across the Geisha variety in the 1930s in the highland region of Gesha in Western Ethiopia. The seeds were then transferred to CATIE, Costa Rica, before being transferred to Panama by Francisco Serracin (also known as Don Pachi). The Peterson family experimented with it on their Hacienda Esmeralda Farm and found that it produced flavors with balance and finesse.

Geisha is more than just an excellent coffee; it has a significant impact on the communities who produce it. It allows farmers to invest profits into improving their farming practices and quality processes. This results in better quality for all the coffee varieties they cultivate.

Monsooned Malabar

Monsooned Malabar is one of the world's most renowned and distinctive coffees, is a chocolatey coffee with the flavor of nutty wood and almost no acidity. It gets its name due to a process known as "monsooning," as well as where it comes from - the wettest region of India in the mountainous region of Malabar which includes Karnataka and Kerala, with protected geographical indication status.

The story behind this coffee is apocryphal. During the British Raj period, large wooden vessels were used to transport coffee beans to Europe. On the way the wind and humidity caused the beans to naturally weather and resulted in a light off white color. Upon arrival in Europe the beans were discovered to have a distinctive and highly desirable flavor profile.

Monsooning is a distinctive and unique method of processing coffee that continues to be used today in Keezhanthoor. This high-range hamlet nestled in the Western Ghats is surrounded by small, traditional tribal farmers who are committed to producing the best quality beans. They produce a full-bodied, very aromatic and smooth coffee that has notes of baker's chocolate, syrupy sweetness and mild vanilla.

This coffee is great alone or blended with fruitier varieties, and it also stands up to milk well, making it an ideal espresso or cafe creme coffee. Pour-overs, such as those in a Bialetti Moka Pot, are also very popular. Because of its less acidity Monsooned Malabar can withstand heat as well.
