The Peterson family experimented with it at their Hacienda Esmeralda Farm and found that it gave flavors with balance and finesse.

This unique and special coffee processing technique, also referred to as monsooning, is still being practiced to today in Keezhanthoor the hamlet that is high-end cocooned in the Western Ghats and surrounded by small-scale, traditional tribal community farmers who are committed to delivering the highest quality beans. They produce a rich, aromatic, smooth coffee with notes like baker's cocoa, syrupy sweetness and a hint of vanilla.

This coffee is excellent on its own or blended with more fruity varieties, and it can also stand up to milk well making it a great espresso or cafe creme coffee. Pour-overs like those found in Bialetti Moka Pot, for instance Bialetti Moka Pot, are also popular. Due to its lower acidity Monsooned Malabar can stand up to heat as well.
