How to Keep Your Coffee Beans Fresh
Similar to a banana left on the counter for several days, coffee beans also go bad. This is due to oxidation and loss of volatile flavor compounds.
You can keep the fresh flavor of roasted beans for a couple of weeks by following these simple tips. The elements of heat, moisture and air are your beans' greatest enemies!
How do you store coffee beans
It's not a secret that coffee beans degrade quickly. To get the best flavor from your beans, you have to store them in a proper manner. Many people are unsure of how best to do this, however. Some people believe that they can just put their beans into the fridge. This isn't the best way to go about it.
Store your beans at room temperature in an opaque, airtight container. This will shield your beans from the two biggest enemies: moisture and air. Air can rob the beans of their fresh-roasted taste and moisture could weaken them as well. The heat can also destroy the aroma and flavor of the beans, and light (especially sunlight) can take away their natural shine too.
In reality, storing coffee beans in the refrigerator could be more harmful than helpful. They can absorb the flavors of other foods, like onions and cheese in the refrigerator, which will alter the taste of your espresso. They may also be exposed by the refrigerator's cool air to moisture and condensation.
You may want to store your beans in the original container or in a plastic bag that can be resealable. Be sure to blow out all the air prior sealing the bag, and then store it in a cool, dark location. This method will also help the beans last a bit longer, but it is recommended to use them within 72 hours after roasting.
Storing specialty coffee beans in the Fridge
Many people keep their coffee beans in their refrigerators however this isn't the best idea. Coffee beans kept in the refrigerator absorb the smells of food and moisture which can adversely affect their flavor. The best place to store your coffee is the dark cabinet, with an airtight, transparent container.
A coffee bag with one-way valves will work perfectly in the fridge however if the beans aren't in this sort of packaging you'll need to move them into a tightly sealed and opaque container such as a glass canister or the Coffee Gator canister mentioned above. It's important that you note that the fridge could be a bit too cold for coffee, which could impact its taste.

They can go longer if you place them in the freezer, but you must be cautious because the beans might suffer from freezer burn, and they can also absorb odors of food that are floating around in the freezer with them.
Storing Coffee Beans in the Freezer
If you're spending 20 dollars or more on a bag of gourmet coffee beans, it's important to understand the best method of storing the beans. Coffee is like sponges and can absorb aromas, moisture and flavors. Therefore, keeping it in a cool dark location in an airtight, opaque container can help keep the taste and aromas safe. You can also freeze the beans but it is recommended to put them in the form of a Ziploc bag prior to freezing to avoid burns from freezing.
Although freezing isn't a good idea, it can help if you have a short amount of time or if you're on the road and want to bring along some of your favorite roast. Coffee beans frozen in the freezer aren't as fresh and have a weaker flavor than beans that are stored in the refrigerator or pantry.
It's recommended to use the beans as soon as possible, but we don't always have that luxury. If you store your coffee beans in a dark, cool place in an opaque airtight container the shelf life of your coffee beans can be extended up to three times. So go ahead and give your coffee a try (be sure to follow the directions above carefully) you may be surprised by how much better your coffee will taste compared to the dull and lifeless beans that rotted in the freezer or fridge.
