Behind every cup of coffee that we drink there are carefully graded beans. The beans are graded based on color, size and shape.

The AA grade is given to coffee beans that meet all the above criteria except they cannot have more than three defective qualities (quakers). Typically, these are Kenya AA beans.

Arabica

Arabica coffee beans, also referred to as Coffea arabica, are the most popular type of bean in the world. Legend has it that coffee was first discovered in Ethiopia when a goat herder observed his herd dancing with more energy after eating the fruit of the coffee plant. This led him to study roasting and making the seeds, resulting in the drink we all know and love today.


While many types of coffee plants exist but there are only two major species used as the base for all our favorite brews: arabica and robusta. The former is generally considered to be superior to the other, and this is evident in the taste of the final drink.

There are a variety of arabica cultivars. Each has its own distinct taste profile. Typica and Bourbon are two of the most well-known arabica cultivars. All other arabica varieties were derived from these two varieties, either through natural mutations, or deliberate crossbreeding. The SL28 cultivar, for instance, was developed in Kenya by Scott Labs and is known for its distinctive chocolatey flavour.

The flavor of an arabica variety is based on the conditions under which it was planted, and also how it was handled and cooked. For example, the type of shade a tree gets, its altitude and soil composition can all play a significant influence on the final outcome.

Robusta

Robusta coffee beans (Coffea canephora) are the second most popular type of coffee. They are the beans used in the majority of instant coffees and contain twice the amount of caffeine as Arabica Coffee Beans. They are also used in a variety of espresso blends, especially for caffe latte and cappuccino.

The Coffea Canephora plant was initially discovered in Sub-Saharan Africa, but it has since been grown all over the world. It can grow at lower elevations and withstand higher temperatures than Arabica coffee plants, which makes it more suitable for farmers. Vietnam is currently the largest producer of robusta coffee, followed by Brazil and Indonesia.

Although the robusta plant has its merits but it's not as loved by cupping enthusiasts for its bitter taste and burnt rubber notes. The majority of large coffee companies use arabica beans to make their top products since it is considered a lower-quality coffee.

The demand for specialty coffees is growing, and small roasters are exploring to benefit from its superior qualities. Liberica

Liberica coffee beans are rare varieties that are not often used in the world. They make up less than 2% of global coffee consumption and are often overlooked because they don't have as much caffeine as Arabica and Robusta do. However, these beans possess an unique flavor that a lot of coffee lovers find irresistible.

Liberica coffee beans, despite being extremely rare and extremely scarce, are still quite popular in certain parts of Asia. They are especially common in Malaysia and Indonesia as they have significant Muslim population. The coffee industry in these countries has historically been extremely strong and drinking the cup of coffee during prayer is a part of the culture.

Liberica coffee's history dates back to the 1890s which was the time when a global epidemic caused by rust on the coffee leaf destroyed the arabica crop. The event prompted coffee producers to find an alternative species that could thrive in tropical climates. They soon discovered the Liberica plant.

Liberica plants are resistant to diseases and pests which makes them an ideal replacement for the depleted arabica crop. Liberica also has the capacity to flourish in hot temperatures and lower altitudes, allowing it to thrive in the climate of Southeast Asia. This is why, today the majority of coffee produced in the Philippines, Indonesia, and Malaysia originates from Liberica beans.

Excelsa

Although it is rare for coffee lovers to find excelsa beans, they are quickly gaining recognition for their unique flavor. According to Komal Sable of South India Coffee Co. who is a fifth generation farmer of coffee, these beans have a similar teardrop shape, but are much smaller. However despite this family resemblance, it's important to note that excelsa is technically not a distinct species.

It's a little ambiguous as to the best way to classify excelsa beans. categorized and it's this confusion that has largely been the cause of the beans' lack of presence in the modern world of coffee. Many roasters, farmers, and brewers aren't aware of how to properly cultivate and use these beans.

It's the individual's responsibility to decide if he or she likes the flavor of excelsa. it can take a while to find the right blend. The key is to be open-minded and give every type of coffee a try until you discover one you really enjoy. If you do this, you'll be able to experience the full range of possibilities that these unique beans can provide. It's a journey worth the ride.
