Behind every cup of coffee that we enjoy, are carefully graded bean. These beans are graded based on the size, color and shape.

The AA grade is awarded to coffee beans that meet the criteria mentioned above, with the exception that they must not have more than 3 defects (quakers). Most often, these are Kenya AA beans.

Arabica

Arabica coffee beans are also referred to as Coffea Arabicica and are the most sought-after coffee beans in the world. According to the legend coffee was discovered by a goatherder in Ethiopia after he noticed that his herd had more energy when they ate the fruits of the plant. This led him to study roasting and making the seeds, resulting in the drink we all know and love today.

While a myriad of coffee plants exist however, there are two primary species used to create the basis for all our favorite beverages: robusta and arabica. The former is generally thought to be superior to the latter, and this is reflected in the flavor of the finished beverage.

There are a number of different arabica cultivars, with every one having their own distinct flavor profile. Two of the most well-known varieties are Typica and Bourbon from which the other varieties of arabica have been developed, through natural mutation or intentional crossbreeding. The SL28 cultivar, for instance was created in Kenya by Scott Labs and is known for its distinctive chocolatey flavour.

The flavor of a particular arabica variety will depend on the climate in which it is grown, and also how it is treated and roasted. For example, the type of shade that a tree receives as well as its altitude and soil composition could all play a significant role in the final result.


Robusta

Robusta coffee beans (Coffea canephora) are the second most popular type of coffee beans. They are the beans that are used in the majority of instant coffees. They also have twice as much caffeine as Arabica Coffee Beans. They are also used in many espresso blends, notably for cappuccino and caffe latte.

The Coffea Canephora plant was first discovered in Sub-Saharan Africa, but it has since been cultivated around the world. It can be grown at lower elevations and withstand higher temperatures than Arabica coffee plants, making it more suited to farmers. Vietnam is currently the largest producer of robusta coffee followed by Brazil and Indonesia.

Although the robusta plant has its benefits however, it's not as adored by cupping enthusiasts due to its bitter taste and smoky rubber notes. Most major coffee companies utilize arabica beans for their premium coffees because it's considered to be a less premium coffee.

The demand for specialty coffees is increasing, and small roasters are exploring to take advantage its superior qualities. Liberica also has the ability to thrive in hot temperatures and lower altitudes. This allowed it to flourish in the climate of Southeast Asia. This is why, today the majority of coffee produced in the Philippines, Indonesia, and Malaysia is made from Liberica beans.

Excelsa

Although it's not typical for coffee lovers to see excelsa coffee beans in their cups, these unique beans are beginning to earn a reputation for their unique flavor. According to Komal Sable, a fifth generation coffee farmer with South India Coffee Co. They are "a variation of the liberica species, and have the same teardrop shape, however, they are smaller." However despite this family resemblance it's important to know that excelsa is technically not a distinct species.

As such, it's a bit hazy as to the best way to classify excelsa beans. classified and it's this confusion that has largely been the cause of the beans' lack of presence in the contemporary world of coffee. Many roasters, farmers, and brewers aren't aware of how to properly cultivate and utilize these beans.

It's ultimately the individual's responsibility to decide if they prefer the taste of excelsa. it could take a while to find the perfect blend. The most important thing is to remain open-minded and give every type of coffee a try until you find one that you truly enjoy. If you do this you'll have the chance to discover the wide range of possibilities that these unique beans have to offer. It's a trip worth taking.
