What Are Coffee Beans?

Origin
Coffee is a beverage made from the seeds that are roasted (beans) of the coffee plant. The beans are one of the most coveted and lucrative commodities in the world. In addition to the major varieties, there are many smaller, specialty beans that are a mixture of robusta and arabica. These beans are called Peaberries and have a more flavorful taste than standard beans.
While roasting, beans can lose their moisture, which can cause them to become stale or bitter. To avoid this, it's crucial to select only fresh, premium beans for your coffee.
Flavor
The four components of flavor- acidity, bitterness, sweetness, and saltiness -can be influenced by variety of beans, the climate, and processing method. These elements can be combined in a variety of ways to create different flavors, ranging from sweet fruity to nutty and even smoky.
When coffee beans are heated they react with the amino acids present in their seeds, forming hundreds of unique aromatic compounds which alter the taste of the beans. This reaction is referred to as the Maillard Reaction, and it occurs in nearly every cooking. The aroma of beans cooked reflects these compounds.
While the Maillard Reaction affects the overall flavor of a roast, nonvolatile or volatile compounds can also affect the flavor of a coffee. Bitterness is often due to roasts with a full body that contain more caffeine, however it can also be due to improper brewing techniques or storage.

These flavor oils are a combination of chemicals and natural flavors that range from cinnamon to vanilla chocolate. The flavors are linked to the beans by polyphenol, a chemical compound.
