1 Cups rice
2 clove garlic
1/2 green chilli
1 inch ginger
4 spring onions
half a carrot
10 cups of water
1 tbsp soy sauce
1tsp vinegar
1tbsp red chilli sauce
3 eggs
1/2 tsp msg salt
Salt
6 tbsp oil







Method:

1 - Soak rice in water (for 15 mins)

2 - Chop ginger, garlic, green chilli FINELY and keep aside. Then chop spring onion and carrots in juvenile sizes and soak green bits of onion in water to get rid of mud.

3 - Get 8 cups of water, add salt according to taste and let it boil. While water is boiling, get a wok put oil in it and heat it on a medium flame.

4 - Get a bowl, beat 3 eggs into it and add the salt (a pinch of salt for every egg). Gradually fry the eggs in the wok.

5 - (LOW FLAME) When egg is done, add 2 more tbsp of oil to wok and add the chopped ginger, garlic and chilli to it and sauté it (2 mins).

6 - After sauté add white bit of spring onion and sauté for further 2 mins then add chopped carrot, soy sauce, red chilli sauce, vinegar, msg salt and 1/2 tsp salt then sauté for 2/3 mins.

7- Drain water from soaked green bit of spring onion and add the green bits to the wok and leave it for a further 2 mins.

8 - Break up the fried egg and put in the wok with the rest of the ingredients. Cook everything for 1-2 mins and turn the gas off.
