3 3/4 cup plain flour
3/4 cup sugar
1/2 cup??(thereabouts) brown sugar
1 tsp baking powder
1 tsp cinnamon
1 tsp salt
4 tbsp honey
1 cup butter (room temp)
4 eggs
1 cup milk
1 tsp vanilla extract
Frosting:
1 egg
1 cup white sugar
½ cup milk
1 ⅓ cups unsalted butter, at room temperature
1 tablespoon rum extract (Optional)
1 teaspoon vanilla extract
Instructions:
1. Lay out cake cases or grease your tray if you are making one big cake and preheat your oven to 180C/350F
2. Mix the flour, sugar, baking powder, cinnamon and salt together
3. Add the eggs, honey, butter, milk and vanilla extract and mix until smooth
4. Put the mixture into whatever you are baking it in
5. Bake for 20mins (cupcakes) or 40mins (big cake)
6. Allow to cool to roughly room temperature before frosting. I would guesstimate about an hour and a half but ALLOW ROOM for missteps here.
Frosting:
1. Beat egg with a fork in a small, heavy saucepan.
2. Mix in sugar and milk. Heat on medium-low heat, whisking constantly, until it just starts to boil. Continue beating rapidly until mixture thickens to a thin custard consistency.
3. Remove from heat and cool completely, about 1 hour.
4. After cooling, beat butter in a bowl with an electric mixer until light and creamy, about 5 minutes.
5. Add cooled custard, 1 to 2 tablespoons at a time, beating well after each addition. Beat in rum and vanilla extract.
6. Keep beating until buttercream is very light and fluffy. Look for stiff peaks and frosting consistency.
COMMUNITY NOTE: if he doesn't like it too sweet, I would suggest adding the rum. Adds a particular flavor. Feel free to replace with another flavoring if that would work better. Best of luck! <3
