How Does Machine Espresso Work?

To make espresso, hot water is pushed under pressure through finely ground coffee. The process is similar to making drip coffee. However it is the pressure that makes the main difference.

The Head of the Group

The Pump

This pressure builds up by drawing tap water from a reservoir and pumping it through a heat exchanger prior to being shot through the ground coffee in the group head.

Pumps are generally more affordable and last longer than piston-driven machines. However, both types of machines may degrade due to overuse and insufficient cleaning. Pumps are also more complicated mechanically, and can add to the price of even the most basic models.

Certain espresso machines utilize steam pressure instead of a pump for brewing espresso. The drawback is that the same boiler that produces steam also raises the temperature of the water to the point of boiling and can result in over-extraction. Additionally the machines often have to rebuild their pressure between cups, which takes time and energy.

A large majority of espresso machines employ either a vibration or rotary pump. A vibration model makes use of the vibrating disk to create pressure, whereas the rotating model pushes hot water through the ground at a rapid speed. Both machines can produce excellent espresso however rotary machines tend to be more quiet, durable and less likely to fail.

The Boiler
