The present study aimed to evaluate the nutritional and bioactive potential of four edible flowers (borage, centaurea, camellia, and pansies). Significant differences were observed among the four. These results can contribute to the knowledge of these edible flowers and consequently increase their popularity among consumers and in the food industry. In this study, four different selected wall materials (namely gelatin, soy protein isolate, maltodextrin and Arabic gum) were applied for blueberry anthocyanin extract encapsulation. The effect of these wall material types on the release and degradation of anthocyanin and the modulation of gut microbiota during in vitro simulated gastrointestinal digestion and colonic fermentation were investigated. It was found that the encapsulation of anthocyanin extract using appropriate wall material could significantly enhance the colonic accessibility of anthocyanins. Soy protein isolate and gelatin delayed the release of anthocyanins, whereas the other two wall materials displayed no significant effect on the release time of anthocyanins. Gut microbiota mainly metabolized some phenolic compounds such as 4-hydroxycinnamic acid and chlorogenic acid. Meanwhile, different fermented anthocyanin extract microcapsule broth could significantly decrease the composition and abundance of Firmicutes and increase that of Bacteroidetes. It is concluded that, amongst the wall materials studied, soy protein isolate appeared to be a functional and suitable candidate to delay anthocyanin release and prevent disease through the promotion of gut health. The aroma characterization of 58 unroasted cocoa beans from 22 different geographical origins was performed by head space solid phase micro-extraction (HS-SPME) combined with gas chromatography-mass spectrometry (GC-MS). Analysis of cocoa beans before and after roasting were performed to follow the aroma modification with the aim to achieve a cocoa volatile fingerprint and a discrimination model based on beans origin. A total of 57 volatiles was identified in unroasted cocoa beans, while 71 volatiles were identified in roasted cocoa beans. The compounds belong to several chemical groups including esters, alcohols, organic acids, aldehydes, ketones and pyrazines. Datasets were submitted to multivariate statistical analysis (Principal Component Analysis, PCA). Results allowed to discriminate unroasted cocoa beans based on their geographical origin samples coming from African countries were separated from samples of American regions, whereas samples from Southeast Asia lie between the other two continents suggesting that Asian samples have intermediate characteristics between African and South American cocoa beans. PCA, applied on the corresponding roasted samples, showed that although the same roasting treatment has been applied to all the samples, the differences among the unroasted samples were also maintained in the aromatic profile after roasting. link2 The discrimination model based on volatile fingerprint combined with chemometric tools, showed interesting potential for origin authentication of both unroasted and roasted cocoa beans. Hibiscus sabdariffa (Hb) calyces are a source of dietary fiber (DF) and phenolic compounds. Agave fructans (AF) and oligofructans (OF) are considered as soluble DF. The aim of the study was to investigate changes in gut microbiota upon feeding predigested Hb, AF, OF or Mix (Hb/AF) to a dynamic, validated in vitro model of the human colon (TIM-2), using sequencing of the V3-V4 regions of the 16S rRNA gene. A pooled human fecal microbiota was used. Production of short-chain fatty acids (SCFAs), branched-chain fatty acids (BSCFAs) and ammonia was also assessed. Samples were taken after 0, 24, 48 and 72 h. Principal component (PC) analysis of fermentation metabolites and relative abundance of genera was carried out, and extracted factors were based on eigenvalues >1.0 and explained >60% of variance. Fermentation of samples resulted in different SCFAS concentrations. The highest butyric acid production was on AF and OF, while the molar ratio of SCFAS on Hb was 631818 for acetic, propionic and butyric acid, respectively. BSCFAS were also produced upon feeding the studied substrates, but in much lower concentrations. About 45 bacteria genera were identified and 10 of these were the most abundant changing during the fermentation time, amongst which a high relative abundance in Bifidobacterium, Bacteroides and Catenibacterium, that changed during the fermentation time depending of substrate. Hb feeding after 48 h led to Bifidobacterium being the most abundant genus. Two PCs were identified after 24 h of fermentation PC1 was highly influenced by Bifidobacterium and Prevotella, which was related with Hb and SIEM feeding. Evaluation of the changes in metabolites and gut microbiota composition during colonic fermentation in a validated in vitro model provides a complete and reliable view of the potential prebiotic effect of different dietary fibers. Palm oil (PO), leaf lard oil (LO), rapeseed oil (RO), sunflower oil (SO), and linseed oil (LINO) are the five of the most typical dietary lipids, while few studies have explored and compared their influences on the serum lipid profiles, colonic short chain fatty acids (SCFAs) composition and colon health of Sprague Dawley (SD) rats. Results from the present work showed that PO and LO groups showed significantly higher serum TG and TC level compared with Ctrl group, whereas, the LDL-C/HDL-C and TC/HDL-C ratio were significantly lower in the RO, SO and LINO groups. Different dietary lipid consumption (15% of the normal diet) decreased the colonic SCFAs concentration. The saturated fatty acid (SFA) was negatively correlated, while unsaturated fatty acid (UFA)/SFA ratio was positively correlated, with colonic isobutyric acid concentration. The C182ω6 and ω3 fatty acids were positively correlated with colonic butyric acid and isovaleric acid concentration, respectively. Results also demonstrated that PO and LO could decrease the colon villus length and crypt depth, and led to colon injury, which might be due to their high SFAs content. Moreover, results suggested that PO and LO could specifically up-regulate the colon inflammation related gene expression levels and down-regulate the Muc2 expression levels, thus, imposing negative impact on the mucus layers. The present study could provide some information for nutritional evaluation about these dietary lipids. Oleogels intended as fat substitutes were prepared by oil dispersion of aerogel particles obtained through freeze-drying (FD) or supercritical-CO2-drying (SCD) of whey protein isolate (WPI) hydrogels (20 g/100 g). SEM revealed that freeze-dried particles presented larger dimensions than supercritical-dried ones. The latter also showed higher oil dispersibility, forming aggregates with lower dimension (300 nm) than those formed by freeze-dried particles (700 nm). Both particles presented oil structuring capability. Freeze-dried particles gave a weak oleogel, while supercritical-dried ones gave a strong (G' = 3.1 × 105 Pa) and plastic (critical stress = 723.2 Pa) oleogel, with rheological features comparable to those of traditional fats. These results can be explained based on the lower aggregation induced by SCD and on the higher capacity of supercritical-dried particles to form a network in oil through hydrophilic interactions, as suggested by FTIR. Therefore, WPI aerogel particles show the potentiality to be used as food ingredients to prepare oleogels with tailor-made physical properties. Consumers' product experiences are increasingly uncovered using approaches that extend beyond acceptability and sensory perception. The present research is situated in this context and adopts a multi-response approach to jointly obtain attitudinal, conceptual, emotional, situational and/or sensorial evaluations. With the aim of greater methodological understanding, three case studies were conducted with samples in three product categories (fruit- and vegetable-based beverages (n = 10), seafood (n = 6) and chocolate (n = 7)) using consumers from New Zealand (n = 196), India (living in New Zealand) (n = 138) and China (n = 167), conducted in central location (CLT) or home-use test (HUT) settings. Showcasing this multi-response approach and demonstrating its versatility in product research is the main contribution of the research. Across the three case studies different combinations of response types and scaling formats were successfully used (including CATA (check-all-that-apply) questions, yes/no questions and rating scales), and it was also found that tasted foods and written stimuli (food names) served equally well as stimuli. The degree of liking or disliking for individual samples was a useful benchmark against which to interpret the other types of responses, and situational appropriateness, obtained as item-by-use (IBU) responses always contributed unique insights. Facial emoji to obtain product-emotion associations yielded less valuable insights than a conceptualisation task. As expected, and in accordance with the rationale for adopting a multi-response approach, the combination of response types yielded greater stimuli insights than would otherwise have been gained. This held for each of the three case studies and supported future applications using a multi-response approach that extends beyond many related initiatives by including four response types in each case study. Because of high water content, the valorisation of broccoli by-products requires dehydration that can preserve bioactive compounds. Blanching pre-treatment has been reported to improve the drying rate of broccoli. As a thermal treatment, it promotes also enzyme inactivation. link3 Therefore, in this study, the impact of pre-dehydration blanching step, freeze-drying, air-drying at 40 °C, and microwave hydrodiffusion and gravity (MHG) dehydration on the levels of pigments, glucosinolates, and phenolics, was evaluated by UHPLC-DAD-ESI/MSn. When compared to freeze-drying, a technique known to preserve compounds, a pre-blanching step increased the extractability of both pigments and phenolics, while air-drying only retained 49% of the pigments and 70% of phenolics, both without affecting glucosinolates. However, when air-drying was preceded by blanching, less than 50% of compounds were retained. On the other hand, MHG dehydration increased the phenolics extractability by 26%, particularly that of kaempferol derivatives while also retaining the amount of the glucosinolate glucoraphanin, when compared to freeze-drying.
