Peri-urban horticulture is crucial to local populations, but a global paucity of information exists regarding the contamination of the associated waterways because of this activity. The aim of this study was to assess pesticide pollution of surface water, suspended particulate matter and bottom sediments from the Carnaval Creek Basin (La Plata, Buenos Aires, Argentina) - a representative system of waterways surrounded by horticultural production - by over 40 selected herbicides, insecticides, and fungicides by gas-chromatography-time-of-flight mass spectrometry and ultraperformance liquid chromatography tandem mass spectrometry. Six sampling campaigns were conducted biannually from 2015 to 2017. Glyphosate and (aminomethyl)phosphonic acid (AMPA), surprisingly, were the most frequently detected pesticides, in concentrations comparable to those reported in areas with genetically modified extensive crops (maximum in water, 20.04 and 4.86 μg·L-1; in sediment, 1146.5 and 4032.7 μg·kgdw-1, respectively). The capability of GO to enhance the toxicity of background contaminants has been widely concerned. However, the effect of GO on heavy metal accumulation in fish embryos remains unclear. Here, we show that GO-promoted chromium (Cr) uptake by zebrafish embryos with multiple effects. The adsorption accelerated the aggregation and settlement of Cr6+-adsorbed GO and decreased the Cr6+ concentration in the upper water, which enhanced the interaction of chorions and contaminants (Cr6+, GO and Cr6+-adsorbed GO). In the presence of GO, the Cr content in chorions and intra-chorion embryos was increased by four times and 57% respectively, compared to that of the single Cr6+ exposure. Furthermore, GO+Cr6+ increased the oxygen consumption rates, embryonic acid extrusion rates and ATP production, induced more serious oxidative stress, and disturbed amino acid metabolism, fatty acid metabolism and TCA cycle. These findings provide new insights into the effect of GO on heavy metal bioaccumulation and toxicity during embryogenesis.Berries are rich food sources of potentially health-beneficial (poly)phenols. However, they may undergo chemical modifications during gastrointestinal digestion. The effect of simulated gastrointestinal digestion on the content and composition of secondary metabolites from Gaultheria phillyreifolia and G. poeppigii berries was studied. The influence of the digested extracts on the in vitro metabolism and absorption of carbohydrates was evaluated. 3-MA After simulated digestion, 31 compounds were detected by UHPLC-DAD-MS. Integration of both techniques provided a guide for meat industries to control spoilage with innovative strategies.A very sensitive, selective, rapid and easy gas-phase preconcentration based method is presented for the determination and speciation of inorganic selenium in chicken meat, poultry eggs, mullet fish (Mugil Cephalus) and sea bass fish (Dicentrarchus Labrax) samples. The results obtained indicate that NIR spectroscopic parameters combined with multivariate calibration could be used reliably to predict the antioxidant capacities of IR-dried rose petals via appropriate mathematical models.Naringenin, a lipophilic flavanone of citrus fruits, was encapsulated for enhanced bioavailability using biodegradable polymers of polylactic acid/polyvinyl alcohol (PLA/PVA) as well as zein/pectin as P/P-Nar-NPs and Z/P-Nar-NPs, respectively. The formulation variables were optimized using response surface methodology to achieve smaller particle size with higher surface charge and encapsulation efficiencies. The optimized formulations were physically characterized by SEM, FTIR, TGA and XRD techniques. Compared to Z/P-Nar-NPs, the P/P-Nar-NPs had better encapsulation efficiency and sustained release of naringenin under simulated gastrointestinal conditions. Furthermore, the oral administration of single dose of free and nanoforms of naringenin in rats (90 mg/kg b.wt) showed higher efficacy of PLA/PVA in improving the relative bioavailability of naringenin (4.7-fold) as compared to the zein/pectin polymer (1.9-fold). Overall, the present study provides insights into the formulation performance of the encapsulated bioactive compound under different polymeric matrices.The effects of far-infrared radiation drying (FIRD), freeze drying (FD), vacuum drying (VD), and hot air drying (HAD) on appearance, physicochemical properties, antioxidant activities, antityrosinase capacity using B16F10 melanoma cell from seed-used pumpkins (hull-less pumpkin and hull pumpkin) were evaluated. Results suggested that hull-less pumpkin (HLP) dehydrated by FIRD provided the highest total polyphenols content (37.11 ± 1.05 mg GAE/ g DW) and the ability of scavenging free radicals. HPLC analysis exhibited that coumaric acid was predominant phenolic acid in pumpkin. The correlation analysis demonstrated that polyphenolic compounds were related to antioxidant capacity. HLP-FD possessed better colour, higher preservation of β-carotene, ascorbic acid and higher sugar contents compared with HLP-HAD. The highest antityrosinase activity was recorded in HLP-VD with a concentration of 37.16%. The melanin inhibition increased to 76.61%, and intracellular tyrosinase activity in B16F10 melanoma cells decreased to 88.63% at 800 μg/mL of polyphenol extract.Food proteins and their constituent peptides impart huge health benefits besides their nutritional attributes. Sorghum bicolor protein hydrolysates (SPH) and derived bioactive peptides generated by simulated gastrointestinal digestion were studied for DPP-4 inhibitory properties using in vitro and in situ assays. Identified peptides, LSICGEESFGTGSDHIR (PEP1), SLGESLLQEDVEAHK (PEP2) and QLRDIVDK (PEP4) displayed potent DPP-4 inhibition with IC50 values of 73.5, 82.5 and 8.55 µM respectively. DPP-4 inhibition mechanism by the peptides was investigated by DPP4-peptide inhibition kinetics, molecular docking and microscale thermophoresis binding studies. The peptides bound to DPP-4 with micromolar affinities and PEP4 showed significantly increased affinity. The mixed type enzyme inhibition by peptides suggested that the peptides either block the active site of DPP-4 or changes the enzyme conformation via a secondary binding site. Overall, the results demonstrate that sorghum seeds are an adequate source of peptides with DPP-4 inhibitory properties that could be used in functional food formulations.This study aimed to investigate the effects of roasting temperature and time on aldehyde formation derived from lipid oxidation in scallop, and the deterrent effect of natural antioxidants extracted from bamboo leaves (AOB). Results showed that roasting process significantly increased the peroxide value (PV), thiobarbituric acid-reactive substances (TBARS), p-Anisidine value (p-AV), and total oxidation (TOTOX) in scallop lipids. Besides, 16 different aldehydes in scallop lipids were detected using an HPLC-ESI-MS/MS method. Among them, the content of hexanal, pentanal, nonanal, trans, trans-2,4-octadienal, and 4-hydroxy-2-hexenal increased in a time- and temperature-dependent manner during the roasting process. After roasting at 210 °C for 40 min, their content increased by 1.23, 0.81, 1.44, 0.59, and 2.12 folds compared with the unroasted group, respectively. However, pretreatment with AOB effectively prevented aldehyde formation in roasted scallops by reducing the oxidation of polyunsaturated fatty acids and scavenging free radicals.Malting and brewing have previously been demonstrated to be risky procedures in terms of mycotoxins contamination. The goal of the study was to describe the fate of less investigated Fusarium and Alternaria mycotoxins, together with their conjugates, during these processes. The Pilsner malt producing process, together with double-mash brewing, were performed in a pilot-scale malting and brewery plants to simulate production of lager - the most popular type of central European beer. In addition, changes in temperature during barley germination were investigated to assess the influence of this critical step. QuEChERS-like extraction followed by UHPLC-HRMS/MS were utilized to quantify the mass balance of 13 mycotoxins and four of their conjugates. The results confirmed germination as the most determining malting step, followed by mashing of malt during brewing. Occurrence of type A trichothecenes, Alternaria mycotoxins and their conjugates in the final beer product indicates the need to take mitigation measures.
