Install mdadm if it’s not already installed:

sudo apt update
sudo apt install mdadm
Create the RAID 1 array using the new partitions:

sudo mdadm --create --verbose /dev/md0 --level=1 --raid-devices=2 /dev/nvme0n1p1 /dev/nvme1n1p1
This will create a RAID 1 array named /dev/md0.
Once the RAID array is created, check its status:

sudo mdadm --detail /dev/md0
Ensure the RAID array is reassembled automatically at boot by saving the configuration:

sudo mdadm --detail --scan | sudo tee -a /etc/mdadm/mdadm.conf
Update the initramfs image to include the RAID configuration:

sudo update-initramfs -u
After completing these steps, you will have a RAID 1 array with a 64GB partition size that you can use to install Proxmox. You can now shut down the system, remove the bootable USB drive, reformat it with the Proxmox installation media, and proceed with installing Proxmox on the RAID array.
Note: When you create the new GPT partition table with fdisk, you will lose all data on the SSD, so make sure to back up any existing data before you proceed.
