How Does Machine Espresso Work?

Machine espresso uses precision pressure and incredible filter technology to produce the delicious coffee we enjoy. What exactly is it that makes it work?

To make espresso, hot water is forced under high pressure through finely ground coffee. The process is similar to making drip coffee. However it is the pressure that makes the main difference.


The Head of the Group

The group head is the portafilter that you place in the espresso maker when making it. It distributes water into the portafilter, and then regulates the pressure of the extraction. There are various kinds of group heads, each with their own advantages and drawbacks. Some are designed to provide temperature stability while others are specifically designed to handle pre-infusion. Others are built to control the lever. Some have a combination of features, such as the E61 one, which is the standard choice for many baristas because of its ability to provide multiple benefits in one package.

It does this by cycling hot water through the brew pan and around the portafilter to ensure that it's always at the correct temperature for extraction. The Pump

Contrary to manual piston machines which rely on a lever that pressurize water, the rotary espresso machines use motorized pumps that provide the nine atmospheric bars of pressure necessary for espresso extraction. This pressure is built up by pumping water through a heat exchanger and then through the ground coffee.

Pumps are typically less expensive than piston-driven models, and they tend to last longer, although both types of machines can get damaged through overuse and lack of cleaning. They also increase the complexity of mechanical systems and can lead to an expensive price for even the simplest models.

Some espresso machines use steam pressure instead of a pump to brew espresso. This can result in over-extraction because the boiler that makes steam also warms the water to boil. These machines also have to continuously rebuild their pressure between cups. This takes energy and time.

Many espresso machines make use of the rotary or vibration pump.
