In this research, each commercial PLP pea (16%), lentil (16%), and faba-bean (20%) was mixed with pea isolate (63%, 63%, and 59%, respectively) and constant ingredients which are canola oil (6%) and wheat gluten (15%) and texturized to produce HMMA using a twin-screw extruder (TX-52) with a cooling die. Soy concentrate and soy isolate were mixed with the constant ingredients and texturized into an HMMA and used as a control. Before freezing for storage, each sample was cooled by air, water, or a brine solution (2% or 4%) for 10 min. Frozen samples were thawed at room temperature (25 °C) for 3 hr and rehydrated by soaking at 25 °C for 2 hr, warm-soaking at 50 °C for 12 hr, or boiling for 2 min. Samples of goat, buffalo, and yak milk were collected from main production provinces in China and the contents of nine elements in milk from different livestock, regions, and lactation stages were determined. Statistical analysis indicated that the contents of Mn, Cu, As, Se, Cs, and Mo in mature milk were significantly different between the three livestock (p less then 0.05). The trends of Mn and Cs contents of the goat milk and buffalo milk increased first and then decreased gradually during lactation. The contents of Se, Cs, Ba, and Mo in mature milk of three livestock were significantly different between the three regions (p less then 0.05). The result of linear discriminant analysis (LDA) and partial least squares discrimination analysis (PLS-DA) showed that the total correct classification rates in different livestock for mature milk reached 86.7 and 90%. For goat milk, the total correct classification rates of different lactations and regions reached 88.9 and 77.8% for LDA (100 and 87.5% for PLS-DA), and followed by yak milk of different regions which achieved 88.9% for LDA (88.9% for PLS-DA). In summary, the microelements in milk showed a significant correlation with livestock, region, and lactation of goat, buffalo, and yak milk. The elemental fingerprints combined with the LDA could be potential for classifying the livestock, lactation stage, and geographical origin of milk. The mechanism of action was explored by examining the gut microbiota and lipid metabolism-related signaling pathways. Real time PCR (RT-qPCR) and western blot analyses demonstrated that MLP (0.8 g/kg·d) and its components inhibited adipocyte differentiation and triglyceride synthesis through the PPAR-γ- C/EBP-α signaling pathway, resulting in lipid metabolism regulation. Gut microbiota analysis indicated that MLM (0.6 g/kg·d) prevented the reduction in intestinal flora diversity (reach 491 species) caused by high-energy feed, and reduced the Firmicutes/Bacteroidetes ratio (to 7.99%) and the obesity associated flora, Lachnospiraceae (to 19.1%), whereas it improved the content of the beneficial flora, Lactobacilli, Lactobacillus_johnsonii (reach 11.77%). MLM improved the bioaccessibility and bioavailability of the two functional components (phenolics and fiber) and maximized the anti-obesity effect through the gut microbiota-host metabolism pathway. PRACTICAL APPLICATION The anti-obesity and lipid metabolism regulation effect of mulberry leaf components were evaluated in this study. The fiber and phenolics of this plant have the potential for development of weight-loss functional foods.To achieve a suitable packaging configuration, it is important first to determine the physicochemical characteristics related to the packaged product. In this study, the physicochemical characterization of fresh purple passion fruits of three different ripening stages was carried out to determine key variables for the packaging, such as O2 consumption and CO2 -ethylene production rates. Subsequently, intermediate-ripe fruits were packaged for 21 days at 6 °C under three packaging conditions Xtend® perforated bags, low-density polyethylene (LDPE) bags, and LDPE bags with a novel ethylene scavenger active additive (ESAA). It was observed that an equilibrium modified atmosphere was formed in the packages. For the Xtend® bags, the highest values of O2 (yo2 = 0.184 to 0.192) and lowest of CO2 (yco2 = 0.033 to 0.041) were reached, whereas for the LDPE bags with ESAA these values were moderate. In the case of ethylene, the LDPE bags showed the highest levels in the headspace (26 to 31 ppm), whereas the lowest levels were obtained in the LDPE bags with additive (2 to 4 ppm).
