In this work, the mechanism of the effect of lipid oxidation on the IgG/IgE binding ability of ovalbumin (OVA) was investigated via the peroxyl radicals produced by 2, 2'-azobis (2-amidinopropane) dihydrochloride to simulate lipid oxidation. Results showed that the structure of OVA unfolded partially with an increase in oxidation degree, leading to the exposure of the allergenic epitopes and increasing the IgG/IgE binding ability of OVA. Nine oxidation sites were found on the α-helix, and these sites may unwind the α-helix and expose the allergenic epitopes on the OVA surface, leading to antibody recognition and combination. Consequently, the IgG/IgE binding ability of OVA was increased. In conclusion, the allergenic capacity of OVA can be promoted by modifying peroxyl radical oxidation in processing egg products.Edible mushrooms are classified as a functional food. The study aimed to initiate in vitro cultures of selected species of Pleurotus P. citrinopileatus, P. djamor, P. eryngii, P. florida, P. TrichostatinA ostreatus, and P. pulmonarius and to optimize the method of cultivation of these species to obtain raw materials characterized by pro-health properties. Another objective was to analyze the biologically active substances in the obtained mushroom materials. By determining the organic compounds and bioelements present in the species selected for the study, it was found that the fruiting bodies obtained by cultivation were characterized by a high content of phenolic and indole compounds. Similarly, the mycelia obtained from in vitro culture were found to contain significant amounts of organic compounds exhibiting biological effects such as lovastatin. The study revealed that the composition of biologically active substances varied between the mycelia obtained from in vitro cultures and the fruiting bodies obtained by cultivation.Two water-soluble red color-related proteins with the molecular masses of 24 and 73 kDa were purified from the shell of Procambarus clarkii. Initial color changes of these two proteins were detected at 30 °C and the large amount of red precipitate were obtained at 80 °C. PAGE analysis showed that the 24 kDa protein was the monomer, while the 73 kDa protein was the trimer. Identification revealed that these two proteins belonged to the hemocyanin subunit 2 family. With respect to the amino acid sequence similarity, the red color-related proteins shared the highest sequence identity with the hemocyanin derived from giant freshwater prawn (Macrobrachium rosenbergii). The phylogenetic tree analysis also clearly supported this finding. The shell-derived red color-related proteins show potential use as the edible thermal-sensitive indicator in food processing field.The micro-flowing water system can improve the flesh quality of freshwater fish using the traditional pond farming method. However, the mechanism of this phenomenon has not yet been explored. This study intends to examine the changes of metabolites in freshwater fish after treatment with the micro-flowing purification system (MFPS). The UPLC-QTOF/MS based metabolomics method was utilized to screen the metabolites and predict the major possible metabolic pathways after MFPS treatment. There were 377 types of metabolites identified in the fish muscle, of which 54-71 represented significant different metabolites identified during different stages of MFPS treatments. The main mechanism of MFPS treatment in improving the quality of grass carp fish muscle was investigated, and the MFPS treatment was shown to improve the flesh quality and the flavor of grass carp fish muscle. This study could provide the theoretical basis for improving the quality of aquatic products.The needing of rapid and sensitive detection method for pesticides is increasing, to facilitate its detection without complicated instruments. Herein, a novel paper-based senor was developed for the visual detection of three carbamate pesticides (metolcarb, carbofuran, and carbaryl) based on CdTe quantum dots (QDs) and nano zinc 5, 10, 15, 20-tetra(4-pyridyl)-21H-23H-porphine (nano ZnTPyP) with a "turn-off-on" mode. This fluorescence sensing model could be applied in the highly selective and sensitive detection of carbamate pesticides both by fluorescence spectrometry or paper-based sensors. Based on the extracted RGB color values of paper, the partial least squares regression (PLSR) was used to accurately quantify the concentrations of carbamate pesticides in different food matrices (apple, cabbage and tea water). This method featured in high speed, low price and high accuracy, and provided a new strategy for the detection of food safety.Proso millet exhibits favorable agronomic and nutritional properties but is currently under-utilized in the northern hemisphere. This study compared processing-induced changes in protein characteristics of commercial pasta to fresh gluten-free pasta from proso millet varieties differing in prolamin profile. Protein solubility, accessible thiols and secondary structures were measured in dough, sheeted and cooked pasta. Relationships between protein conformation and characteristics related to pasta quality were determined. Cooking significantly lowered protein solubility and induced exposure of thiol groups as well as a shift in secondary structure distribution, while sheeting only had a minor effect. Random structures positively and significantly (P less then 0.05) correlated with solubility, cooking loss and protein digestibility. In contrast, β-sheets, the main secondary structure in cooked pasta, negatively correlated with these properties. The utilization of proso millet in gluten-free pasta is promising, however, processing optimization to elicit targeted protein modifications to balance quality and nutritional attributes requires further investigation.The outbreaks due to the low number of foodborne pathogens present in ready-to-eat products can be prevented by rapid and sensitive detection method. However, as a conventional detection method, it is impossible to monitor foodborne bacteria existing which is less than 50 cfu/25 g in a food. This study was designed to investigate the possibility of detecting 1 cfu in the short-term through filtration, DNA concentration, and qPCR. As a result of the filtration + DNA concentration method, the recovery concentrations of Escherichia coli O157H7 and Salmonella Typhimurium was not significantly different from initial inoculation (>7 cfu/25 g). In iceberg lettuce and cabbage, this method was able to detect 7 and 7 cfu/25 g of E. coli and 68 and 5 cfu/25 g of S. Typhimurium. We demonstrated the potential of the filtration + DNA concentration method as a shorter time alternative to conventional enrichment-based rapid detection in vegetables.
