At present, monitoring of yogurt production is performed by sampling for microbiological and physicochemical measurements. In this study, Near-Infrared Spectroscopy (NIRS) is proposed for non-invasive automated control of yogurt production and better understanding of lactic acid bacteria (LAB) fermentation. UHT (ultra-high temperature) sterilized milk was inoculated with Bulgarian yogurt and placed into a quartz cuvette (1 mm pathlength) and test-tubes. Yogurt absorbance spectra (830-2500 nm) were acquired every 15 min, and pH, in the respective test-tubes, was measured every 30 min, during 8 h of fermentation. Spectral data showed substantial baseline and slope changes with acidification. These variations corresponded to respective features of the microbiological growth curve showing water structural changes, protein denaturation, and coagulation of milk. Moving Window Principal Component Analysis (MWPCA) was applied in the spectral range of 954-1880 nm to detect absorbance bands where most variations in the loading curves were caused by LAB fermentation. Characteristic wavelength regions related to the observed physical and multiple chemical changes were identified. The results proved that NIRS is a valuable tool for real-time monitoring and better understanding of the yogurt fermentation process.High-quality-factor Micro-Electro-Mechanical System (MEMS) resonators have been widely used in sensors and actuators to obtain great mechanical sensitivity. The frequency drift of resonator with temperature is a problem encountered practically. The paper focuses on the resonator frequency distribution law in the temperature range of-40 to 60 °C. The four-layer models were established to analyze thermal stress caused by temperature due to the mismatch of thermal expansion coefficients. The temperature variation leads to the transformation of stress, which leads to the shift of resonance frequency. The paper analyzes the influence of hard and soft adhesive package on the temperature coefficient of frequency. The resonant accelerometer was employed for the frequency measurements in the paper. In experiments, three types of adhesive dispensing patterns were implemented. The results are consistent with the simulation well. We also examined how the intranasal administration of rotenone modulates synaptic transmission and plasticity in layer V pyramidal neurons of the mouse insular cortex that is critical for conditioned taste aversion memory. We found that the intranasal administration of rotenone impaired conditioned taste aversion memory to bitter taste. Regarding its cellular mechanisms, long-term depression (LTD) but not long-term potentiation (LTP) was impaired in rotenone-treated mice. Furthermore, spontaneous inhibitory synaptic currents and tonic GABA currents were decreased in layer V pyramidal neurons of rotenone-treated mice compared to the control mice. The impaired LTD observed in pyramidal neurons of rotenone-treated mice was restored by a GABAA receptor agonist muscimol. These results suggest that intranasal administration of rotenone decreases GABAergic synaptic transmission in layer V pyramidal neurons of the mouse insular cortex, the result of which leads to impairment of LTD and conditioned taste aversion memory.The study of transcription and its regulation is an interdisciplinary field that is closely connected with genetics, structural biology, and reaction theory.
