How a Coffee Espresso Machine Works

Bezzera's invention inspired Desidero Pavoni, an owner of a café and an entrepreneur. He purchased a portion of the patent granted by Bezzera and sold his version as the "Ideale" espresso machine. This model is not similar to modern espresso machines but it was the first commercially accessible model.
Pavoni's machine set the standard for the espresso's one-ounce capacity, and he was the first person to use pressure to make a thick crema. This was a huge improvement in coffee. He also reduced the temperatures of the boiler and used a valve which allowed pressure to increase and decrease at regular intervals.
