The composition of beer wort in terms of amino acid (AA) content affects the final product quality, once it is related to the vitality of yeast during the initial exponential growth phase and throughout fermentation. The objective of this work was the use of a capillary zone electrophoresis method with UV-vis detection in association with Principal Component (Data) Analysis for craft beer classification. Cysteine, histidine, phenylalanine, lysine, tryptophan and arginine were the monitored AAs in wort and finished beer, which were extracted through cation exchange resin. Good differentiation among samples according to their production was obtained, showing a profile of AAs ( less then LQ-99 µg mL-1) for each wort, which can be used as indicator of the quality of a beer. One of the samples had the mashing step monitored, showing an increasing profile in the concentrations of AAs (6.5-55 µg mL-1), which can be explained by the protein cleavage.Zirconium(Ⅳ)-based metal-organic framework (MOF)-UiO-66-NH2 was fabricated to adsorb the imidacloprid and thiamethoxam in fruit samples before analysis using UPLC-MS/MS. The UiO-66-NH2 was confirmed by SEM, FTIR, and XRD. Key experimental parameters were investigated by response surface methodology (RSM). The desirability recovery of imidacloprid was 94.52% under optimum conditions (mount of adsorbent = 52.48 mg, volume of eluent = 5.18 mL, pH = 9, extraction time = 15 min). The desirability recovery of thiamethoxam was 93.57% under optimum conditions (mount of adsorbent = 50.58 mg, volume of eluent = 2.6 mL, pH = 5.65, extraction time = 11.94 min). Under the optimal conditions, the actual recovery of imidacloprid and thiamethoxam was 92.39% and 94.37%, respectively. Besides, the method was applied successfully to detect imidacloprid and thiamethoxam in different fruit samples. The results demonstrated that the UiO-66-NH2 is an excellent adsorbent for the extraction imidacloprid and thiamethoxam from fruit samples.This study analyzed the meat and bone meal (MBM) matrix complexity from the perspective of fraction composition diversity and a classification strategy was proposed to accurately and rapidly identify the MBM species based on near infrared spectroscopy (NIRS). Partial Least Squares-Discrimination Analysis (PLS-DA) based on full samples, meat meal (MM), MBM and bone meal (BM) performed with decreasing classification errors of 0.115, 0.079, 0.044 and 0.039 which were partly caused by wide sample range; bone fraction content had positive correlation with most of MBM species differences reflected by principal component scores; and PLS-DA classification errors among MM, MBM and BM were lower than 0.013. To take fully advantage of the above results, a sequential classification strategy was proposed; near infrared spectra were selected (belong to MM, MBM or BM) and then species discrimination analysis was conducted based on the specific PLS-DA model.Acacia mearnsii gum is not commercially exploited, being characterized as residue from A. mearnsii cultivation. This work investigated the A. mearnsii gum polysaccharide composition, its cytotoxicity and the technological effect as a stabilizer in ice cream. A. mearnsii gum showed a similar chemical structure to commercial gum Arabic and did not decrease the viability and proliferation of fibroblast cells (Balb/3T3) and hepatocarcinoma (HepG2). Rheological tests showed that the ice cream stabilized by the A. mearnsii gum had a more structured system (more interactions between the mixture components) and the same melting characteristics as the ice cream samples made with commercial gum Arabic. The results showed that A. mearnsii gum, which is actually an agro-industrial residue from tannin production for industry, is a potential stabilizing gum for the food industry, contributing to the economic development of the exploitation chain of A. mearnsii products and by-products.The acquisition of resveratrol from Polygonum cuspidatum is complicated and costs organic solvents due to extraction and hydrolysis of its corresponding glycoside (polydatin). In this work, a novel one-pot method based on deep eutectic solvent (DES) was developed for simultaneous extraction and conversion of polydatin to resveratrol from Polygonum cuspidatum for the first time. The extraction yield of resveratrol by DES-based one-pot method were significantly higher than that of water, methanol and ethanol. After optimization by One-Variable-at-a-Time and response surface methodology, the extraction yield of resveratrol reached 12.26 ± 0.14 mg/g within 80 min. The conversation efficiency of polydatin to resveratrol in Polygonum cuspidatum from five different origins was more than 96.3%. Scanning electron microscope results indicated the selected DES disrupted plant cell walls to enhance the yield of resveratrol. The results indicated that one green method was successfully established for efficient extraction and conversion of polydatin to resveratrol from Polygonum cuspidatum.Palate fullness and mouthfeel of beer are key attributes of sensory beer quality. Non-volatile substances and molar mass fractions influence sensory perceptions of palate fullness and mouthfeel. However, systematic correlations between sensory attributes and native beer compounds have not been evaluated within the concentration range found in lager beer. GSK3787 antagonist This article reports a chemometric analysis of 41 lager beers by evaluating analytical data of beer compositions, palate fullness, and mouthfeel descriptors. AF4-MALS-dRI indicated high variability in the macromolecular compositions of classical lager beers. Screened beers were clustered into groups differing significantly in palate fullness intensity and macromolecular distribution. Significant correlations were found between palate fullness and macromolecular fractions and beer composition parameters original gravity, viscosity, indices of macromolecular distribution, total nitrogen (p less then 0.001), and β-glucan (p less then 0.01). Thus, a model was built using partial least square regression (PLS) analysis to predict the palate fullness intensity in beers (R2C = 0.7993). This model can be used as a guideline by brewers to control palate fullness and mouthfeel.
