aggregata, and provide valuable information for the application of traditional non-medicinal parts ofL. aggregata in food and pharmaceutical industries. This study addressed the impact of fruit wax(lecithin)-based oleogels as dispersed phase in formation and stability of oil-in-water emulsions. These hybrid emulsions were prepared above the melting point of the oleogels, using Tween 80 (T80) or whey protein isolate (WPI) as emulsifiers. Both mono- and mixed-component oleogels comprised of fruit wax (FW) or FW + lecithin (FWLEC), respectively, were studied as lipid phases. After hot-homogenization, emulsions were submitted to quiescent cooling and stored over 14 days at 5 or 25 °C, in such temperatures supposed to assist or hinder oleogelation, respectively. Time course promoted a slight decrease in zeta potential only for WPI-stabilized emulsions and particle size distribution was shifted to larger size values, but showing a lesser extent to those stored at 5 °C. selleck inhibitor The presence of oleogels improved kinetic stability of emulsions compared to liquid oil at both temperatures, disclosing the role of the combined effects of the type of emulsifier and oleogelator(s)-emulsifier interactions. These outcomes are associated with the interfacial activity played by both oleogelators, but mainly lecithin that led to lower values of interfacial tension. In addition FWLEC combined with WPI showed the lowest complex modulus from dilational rheology, which can be related with WPI-LEC complex formation. Overall, results suggest that oleogelators migrated to the O/W interface of dispersed droplets, no longer reflecting oleogel bulk properties and showing a more complex behavior. However, the formation of more complex structures at the interface favored greater stability of the emulsions. Thus, the new perspective of oleogel-inspired fat droplets in hybrid systems can expand the conventional approach of oil structuring to create mixed interfaces tailoring oil-in-water emulsions properties.Since natural materials, such as phytochemicals in plants, are increasingly being used for foods and skincare due to their beneficial functions, it is important for developing the cultivation practices to increase the contents of phytochemicals. We here explored metabolite perturbations in the leaves of soybean plants when their pods were removed during growth through 1H NMR-based metabolomics approach. There were obvious metabolic differences in the leaves between normal and pod-removed soybean plants. High amounts of primary metabolites in pod-removed soybean leaves, including amino acids, sugars, and fatty acids, reflected a delay of leaf senescence caused by pod removal. In particular, amounts of isoflavones, coumestrol, and apigenin derivatives in pod-removed soybean leaves were substantially increased. These were considered as distinct metabolic influences of pod removal in soybean plants. These results indicate that pod removal of soybean plants can induce significant perturbations of various metabolites in their soybean leaves, providing useful information to improve the quality of soybean leaves by increasing amounts of bioactive components.Bilayer edible films were fabricated with the stacking double layers, in which the outer and inner layer was consisted of hydrophobic ethyl cellulose and hydrophilic carboxymethyl chitosan hydrogel, respectively. Humidity regulating performance of the films varied with the change of substitution degree of carboxymethyl chitosan. The mechanical properties, water insolubility, water vapor permeability, water contact angle, moisture absorption/desorption characteristics and micro morphology of the film were characterized, which showed that the film can adjust the relative humidity and block the external moisture. The film prepared by carboxymethyl chitosan with the substitution degree of 120% was then selected for the packaging of fresh mushrooms (Agaricus bisporus). The browning of the mushrooms during storage was delayed, as well as the qualities were maintained well, Additionally, the activities and corresponding gene expression of PPO enzyme were inhibited, however for PAL enzyme, an increase was observed.Dry salting has important effects on food lipids. In this work, the reliability of LipidSearch software identification and its application to assess the effect of dry salting on the long-chain free fatty acid profile of tilapia muscles were studied by ultra-high-performance liquid chromatography-Q-Extractive Orbitrap mass spectrometry and LipidSearch software. Compared with the standard reference identification method, the LipidSearch software identification method was suggested to be a reliable identification method for long-chain free fatty acid identification. During the dry salting process, tilapia muscles with low muscle-to-salt mass ratios of 3-8 might have stable and similar free fatty acid profile changes, and the free fatty acid amounts decreased and then increased with time. This work could provide useful information to evaluate the development and application of LipidSearch software as well as a way to analyze the effect of dry salting on the free fatty acids change of aquatic products.Reactive oxygen species (ROS) trigger and accelerate leaf senescence. Melatonin, a low molecular compound with several biological functions in plants, is known to delay leaf senescence in different species, including Chinese flowering cabbage. However, the mechanism(s) underpinning melatonin-delayed leaf senescence remains unclear. Here, we found that melatonin lowered the expression of chlorophyll catabolic genes (BrPAO and BrSGR1) and senescence-associated genes (BrSAG12 and BrSEN4), decreased chlorophyll loss, minimized the alteration in Fv/Fm ratio and remarkably delayed senescence of Chinese flowering cabbage after harvest. Moreover, the over-accumulation of O2•-, hydrogen peroxide (H2O2) and malondialdehyde contents and the expression of respiratory burst oxidase homologues (RBOH) genes (BrRbohB, BrRbohC, BrRbohD, BrRbohD2 and BrRbohE) were significantly inhibited by melatonin treatment. Melatonin-treated cabbages also showed higher O2•-, OH• and DPPH radical scavenging capacity and enhanced activities of peroxidase (POD), superoxide dismutase (SOD) and their gene expressions.
