In this study, some chemical components of hemp seed, which widely consumed as snack food in Middle East were determined. The effects of different roasting temperatures (140, 160 and 180 °C) and times (0-60 min) on the oxidative stability and antioxidant content of hemp seed oil were investigated. Hemp seed oil contained high levels of linoleic acid (54.85%), α-linolenic acid (18.13%) and γ-tocopherol (707.47 mg/kg oil). While tocopherol isomers decreased with increasing roasting time and temperature, total phenolic content and antioxidant activity showed increasing trend. The peroxide and p-anisidine values of roasted samples varied from 1.33 to 3.09 meq O2 /kg oil and 1.65 to 43.27, respectively. The peroxide and p-anisidine values of samples were simultaneously generated at the early stage of roasting. Kinetic evaluation of data showed that peroxides act as limiting factor in autocatalytic oxidation reactions. Based on peroxide and p-anisidine values, roasting at 140-160 °C for 35 min or at 180 °C for 15 min are recommended to provide good quality roasted hemp seed.This research was carried out to evaluate the effect of viscozyme pre-treatment followed by hydrodistillation (E-HD) on extraction yield, extraction time and quality of methyl cinnamate basil (O. canum) oil. The viscozyme, as a multienzyme acting on cell wall, was used at different concentrations (0.5% and 1%, v/w) for 30, 60 and 90 min at 50 °C and pH 5 before hydrodistillation (HD). Oxygenated monoterpenes/monoterpene hydrocarbons ratio was used as a quality index for the obtained essential oil. Enzymatic pretreatment at 1% enzyme concentration for 90 min followed by HD increased yield of essential oil by 44.5% with high quality index and decreased HD time from 180 to 30 min. Thirty-nine volatile compounds, comprising > 99% of the essential oil were identified and quantified by Gas Chromatography Mass Spectrum (GC-MS). The major components of essential oil were (E)-methyl cinnamate, camphor, trans-β-caryophyllene and 1,8-cineole. Results confirm the effectiveness of the enzyme pretreatment, which enhance extraction of O. canum essential oil in a short time, with a high quality.Achiote (Bixa orellana) is highly appreciated as a condiment and as the main source of bixin and tocotrienols, both having antioxidant properties. To explore the possibility of maximizing the antioxidant activity of achiote seed extracts using clean methodologies, the use of sonication and green solvents were tested. Ethyl lactate, isopropyl acetate, and ethanol combined with probe sonication produced the best results, obtaining similar bixin contents but higher δ-tocotrienol contents, as well as significantly higher in vitro and in vivo antioxidant activity compared with the maceration method extract, requiring low energy and saving time and solvents. The probe-sonicated achiote extract with the highest δ-tocotrienol content was better at increasing the Caenorhabditis elegans resistance to oxidative stress than the extract obtained through maceration. This is the first report about the effect of sonication combined with green solvents on the bixin and δ-tocotrienol content in achiote seed extracts and its relevance on the in vitro and in vivo antioxidant activity.The yield and quality of sugar beet pulp pectin obtained by ultrasound-assisted extraction (UAE) were compared to those obtained by conventional heating. Extraction temperature (70-90) °C, extraction time (2-4) h and pH (1-1.5) were considered as the variables for the conventional extraction while ultrasound frequency (20-60) kHz, time (10-30) min and amplitude (60-100%) were considered as the variables for UAE. The optimal conditions for maximum yield of pectin for conventionally and ultrasonically extracted pectin were determined by the central composite design and the Box Behnken design, respectively. The optimum conditions of conventional extraction were the temperature of 90 °C, time of 4 h and pH of 1. The optimum conditions of UAE were ultrasound frequency of 20 kHz, time of 10 min, and ultrasound amplitude of 96%. Extraction using the optimized conditions of conventional heating and UAE achieved the best yield of 20.75% and 20.85%, respectively. The degree of methyl esterification, ferulic acid content and molecular weight of UAE pectin were higher than conventionally extracted pectin but the content of galacturonic acid in UAE pectin was lower than that of conventionally extracted pectin. The infrared spectra of both pectins revealed the occurrence of polysaccharide component. The pectin achieved by UAE had higher lightness value than conventionally extracted pectin, confirming its application in different products partially in bright food products. The UAE pectin possessed higher viscosity than conventionally extracted pectin. The addition of UAE pectin increased all of the DSC gelatinization parameters. Overall, UAE could be a promising scalable and economical approach to obtain pectin with unique characteristics.The objective of this study was to examine the effect of different treatments on the physicochemical, antioxidant, and antibacterial properties of honeydew honey. Honeydew honey was subjected to heat treatment and 9 different ultrasound treatments. Our results showed that the following parameters were significantly changed water content, pH, electrical conductivity, diastase activity, HMF content and water activity. The ultrasound resulted in an increase in the total phenol content and the antioxidant capacity (DPPH, FRAP, and ABTS tests) in comparison with the conventional thermal technique. In most cases, the samples subjected to ultrasound improved the antibacterial activity; the heat treatment resulted in a significant reduction of the antibacterial activity, and sample 4 (ultrasound 30 °C, 5 min) showed the best antibacterial activity. The ultrasound treatment, especially at lower temperatures, represents a technique that enables the preservation and improvement of the biological properties of honeydew honey.
