Nowadays, as consumers tend to avoid foods containing synthetic preservatives, technologically processed plant extracts can be a good alternative to these preservatives. In this study, previously obtained basil essential oil microcapsules (BEOM) were added to mayonnaise in order to produce a microbiologically safe product with improved physicochemical properties. Mayonnaises were prepared with 0%, 0.3%, 0.6%, and 0.9% BEOM replacement of the total oil content, called Mayo-Control, Mayo-0.3% BEOM, Mayo-0.6% BEOM, and Mayo-0.9% BEOM, respectively. Additionally, Mayo-SP containing ethylene diamine tetra-acetic acid and potassium sorbate was prepared. The enriched mayonnaises displayed better antimicrobial activity against Escherichia coli than Mayo-SP and Mayo-Control. Mayo-SP showed the best antimicrobial activity against Salmonella Typhimurium, followed by Mayo-0.9% BEOM. At the end of storage, Mayo-0.9% BEOM had the highest apparent viscosity, G', and G'' values due to its high content of gum molecules. Trans-2-heptanal, an oxidation product, was not identified in the enriched mayonnaises or Mayo-SP. Finally, BEOM were efficient in providing microbial safety of mayonnaise and also improved the product's oxidative stability, viscosity, and aroma.Tomato leaf curl New Delhi virus-potato (ToLCNDV-potato) causes potato apical leaf curl disease which severely affects nutritional parameters such as carbohydrate, protein, and starch biosynthesis thereby altering glycemic index (GI) and resistant starch (RS) of potato. ToLCNDV-potato virus was inoculated on potato cultivars (Kufri Pukhraj [susceptible]; Kufri Bahar [resistant]) and various quality parameters of potato tuber were studied. There was a significant (P less then 0.01) reduction in starch, amylose and resistant starch contents in the infected tubers. However, carbohydrate and amylopectin increased significantly (P less then 0.01) which contributes to increased starch digestibility reflected with high GI and glycemic load values. Besides, ToLCNDV-potato infection leads to a significant increase in reducing sugar, sucrose, amino acid and protein in potato tubers. This is a first-ever study that highlights the impact of biotic stress on GI, RS and nutritional quality parameters of potato which is a matter of concern for consumers.Magnetic dispersive micro-solid phase extraction (MDMSPE) was coupled with solidified floating organic drop microextraction (SFODME) for direct separation and preconcentration of Mn(II) and Mn(VII) before graphite furnace atomic absorption spectrometry determination. MDMSPE involved use of magnetic ZnFe2O4 nanotubes for adsorbing Mn(VII). Sorbent was isolated from aqueous phase by an external magnet. Mn(II) in upper solution from MDMSPE was further enriched by SFODME. This method avoids tedious pre-oxidation/pre-reduction operation and time-consuming centrifugation/filtration step. An enrichment factor of 200-fold was obtained. Detection limits of this method were 0.005 and 0.007 ng mL-1 for Mn(II) and Mn(VII) with relative standard deviations of 4.0% and 4.8% (n = 9), respectively. This method was successfully used for detection of Mn(II) and Mn(VII) in tap water, ice tea, energy drink, mineral water, sprite drink and carbonated drink. A certified reference material of water sample was analyzed with satisfactory results. Recoveries of spike experiments ranged from 92.5 to 106%.Benchtop near-infrared (NIR) spectroscopy coupled with multivariate analysis was used for the classification and prediction of antioxidant properties of walnut. Darapladib Total phenolic content (TPC), total flavonoid content (TFC), ABTS assay and FRAP assay were performed spectrophotometrically. The synergy interval partial least square coupled competitive adaptive reweighted sampling (Si-CARS-PLS) was used for the prediction. A decent discrimination using principal component analysis (PCA) was observed by mean of spectroscopic and antioxidant properties data with total cumulative variance of 99.26% (PC1 = 95.07%, PC2 = 2.98%, PC3 = 1.21%) and 96.60% (PC1 = 64.28%, PC2 = 32.32%) respectively. The Si-CARS-PLS yielded optimal performance, RP = 0.9616, RPD = 3.807 for TPC, RP = 0.9657, RPD = 3.367 for TFC, RP = 0.9683, RPD = 2.728 for ABTS assay, and RP = 0.914, RPD = 2.669 for FRAP assay. These findings revealed that NIR integrated with Si-CARS-PLS could be used for the prediction of antioxidant properties of walnut.l-Tryptophan (l-Trp) is an amino acid important in nutrition, and mainly provided by food supplements. However, it is known to be unstable under light irradiation, which is an issue for the nutrition and feed industry. In the present study, the photostability of l-Trp was studied in acidic aqueous solutions under air and under an inert atmosphere, N2. The photodegradation was followed using UV-visible and fluorescence spectroscopy after photolysis. Moreover, molecular orbitals and bond dissociation energies calculations, and electron spin resonance spectroscopy were performed. From all these results, a photodegradation occurring through a free radical pathway was suggested. Interestingly, several antioxidants were tested to improve the photostability of l-Trp, especially during irradiation under air, since the l-Trp was evidenced to be much less stable under air than under N2. The results showed that sodium benzoate or EDTA were not efficient, but antioxidants such as chlorogenic acid, ascorbic acid or potassium sorbate improved significantly the photostability of l-Trp in acidic solutions.Effective evaluation methods for assessing the nutritional quality of foods that eliminate free radicals (i.e., foods that are classified as antioxidants) have long attracted the attention of scientists and the populace. In this case, constructing a corresponding photoelectrochemical sensor that has the advantages of being intuitive, rapid, and capable of accurate assessment for global antioxidant capacity is of profound significance. In this study, a novel g-C3N4/NiS/TiO2 photoelectric sensitive platform was constructed and afforded the possibility of a synergistic/antagonistic effect for estimating intrinsic antioxidant ingredients in food. Further investigation revealed that the internal influences of the compound structure, such as the redox potential and type of groups on the molecular benzene ring should be the main internal reasons for antioxidant synergistic behaviors. The photochemical strategy of concern is expected to provide benefits for on-site foods nutrition assays that should become a guide for health care diets.
