Thaumatin II, a supersweet protein from the African plant katemfe (Thaumatococcus daniellii Benth.), shows promise as a zero-calorie sweetener for use in the food and pharmaceutical industries and for improving the taste of fruit.
We report on the stability of thaumatin in salted and pickled tomatoes, as well as on the effect of thaumatin on the taste quality of processed tomatoes. Fruit of tomato cv. Yalf, transformed with the thaumatin II gene were salted and pickled and then stored for 6months. Western blot analysis showed relative thaumatin II stability at salting; its content in processed fruits was 62-83% of the initial level depending in the studied line. In pickled tomatoes, thaumatin II content was decreased by up to 25% of the initial amount. Both salted and pickled tomatoes had a sweet taste with a typical thaumatin aftertaste. Salted tomatoes were characterized as being sweeter than pickled tomatoes. The overall taste of pickled tomatoes was rated by panellists as significantly better compared to that of salted or non-processed ones.

This study was conducted to explain the psychological reactions of COVID-19 patients to the stress caused by the disease crisis from the perspective of the survivors.
A phenomenological approach was adopted to the qualitative study of 14 COVID-19 survivors selected through purposive sampling.
Two themes extracted as the psychological reactions of the patients to the COVID-19-induced stress included "self-moderating effect of stress" and "psychological maladaptation."

Time-dependent density functional theory calculations showed that the complexes have a low-lying unoccupied orbital with strong σ-antibonding character toward the majority of the coordination bonds. The UV-visible absorption bands were assigned as mainly ligand-centered or metal-to-ligand charge-transfer transitions, with strong contributions from the chlorido and azido groups. In complexes with substituted Ph-azpy ligands, σ-donation from NMe2 and OH/O- groups results in a redshift of the main absorption bands compared with unsubstituted Ph-azpy complexes. The diazido complexes are photoactive in solution upon irradiation with either UVA or visible light for R = H or NMe2 , or UVA only when R = OH/O- . Intriguingly, the phenolate group of the latter complex undergoes very slow protonation in solution. Biological screening was limited by poor solubility; however, initial tests showed that the phenolato diazido complex is rapidly taken up into the nuclei of HaCaT keratinocytes, which are stained intensely blue, and its cytotoxicity is increased upon irradiation with UVA light.Urban gardening has been experiencing increased popularity around the world. Many urban gardens are located on sites that may be contaminated by trace elements or organic compounds due to previous use. The three main exposure pathways to the human body for soil contaminants are (a) ingestion of soil directly, (b) consumption of produce containing or superficially contaminated with a contaminant, (c) and inhalation of soil dust. The first two modes have received much attention; however, the contribution of the inhalation route has not been investigated adequately. Two inhalation risk studies were carried out in urban gardens located in Kansas City, MO, by collecting dust while 25-m2 plots were rototilled. Microclimatic variables were monitored, and total inhalable dust mass was determined using a personal sampling train including a small pump and air filter. Soil lead (Pb) concentration was assessed at both sites. For Study 1, particle size distribution of collected particles was estimated through analysis of scanning electron microscope images of filters. Little dust was collected at either site. Most particles captured, however, appeared to be less then 4 μm in diameter. The amount of dust emitted was correlated with soil moisture. Tilling reduced soil aggregate size and blended soil, resulting in a more homogeneous distribution of Pb. Dust inhalation while tilling is likely not a major Pb exposure risk for gardeners, but given the preponderance of very small particles in what was captured, care should be taken to prevent dust from entering the respiratory system.
