© Association of Food Scientists & Technologists (India) 2019.The effects of dynamic ultra-high pressure homogenization (UHPH) on the structure and functional properties of whey protein were investigated in this study. Whey protein solution of 10 mg/mL (1% w/w) was prepared and processed by a laboratory scale high pressure homogenizer with different pressures (25, 50, 100, 150, 200, and 250 MPa) at an initial temperature of 25 °C. Then, the solution samples were evaluated in terms of secondary structure, sulfhydryl and disulfide bond contents, surface hydrophobicity, average particle size, solubility, foaming capacity, emulsifying activity, and thermal properties. It was found that the secondary structure of whey protein changed with the dynamic UHPH treatment. The interchange reaction between the disulfide bond and the sulfhydryl group was promoted and the surface hydrophobicity significantly increased. The functional properties of the whey protein accordingly changed. Specifically, after dynamic UHPH treatment, the average particle size of the whey protein and emulsion decreased while the solubility, the foaming capability and the emulsification stability increased significantly. The results also revealed that with the dynamic UHPH at 150 MPa, the best improvement was observed in the whey protein functional properties. The whey protein solubility increased from 63.15 to 71.61% and the emulsification stability improved from 195 to 467 min. © Association of Food Scientists & Technologists (India) 2019.The present research was inducted to assess the physical properties of Terminalia bellerica fruit which is commonly known as belleric myrobalan. The research includes dimensional properties, gravimetric properties, and frictional properties of the T. bellerica. These properties form an important base for the designing of machine or equipment; those are used in the post-harvest operations. The reported average value for the dimensions of the fruit were 26.80 mm, 20.85 mm, 20.85 mm as long dimensional axis, intermediate dimensional axis, and short dimensional axis respectively. The arithmetic mean diameter, equivalent mean diameter, and geometric mean diameter were calculated as 22.54 mm, 22.32 mm, and 22.31 mm respectively. The sphericity was found to be 0.83 while the aspect ratio was 0.78. In the gravimetric properties, true density and the bulk density for the dried fruit of T. bellerica was found to be 0.63 g/cm3 and 0.57 g/cm3 respectively. In the frictional properties, static coefficient of friction was found to be highest on the mild steel and plywood sheet (0.25) and lowest was on the stainless steel sheet (0.19). The angle of repose was found to be 33.96°. Along with the physical properties of the fruit, mass modeling was done for which the fruits were categorized into 3 categories based on their weight. Each category of fruit showed the different significance level and regression factor in every model namely linear, quadratic, power, and S-curve. The quadratic model showed highest level of significance for all the dimensions, area and volume in the small and large mass group while power model was the best fit in the medium mass group. It was concluded that the quadratic model in the small and large mass group while power model in the medium mass group are recommended as best fit and can be used for the design considerations of any post-harvest machine or equipment. © Association of Food Scientists & Technologists (India) 2019.Phytomelatonin-rich (194.02 ± 2.45-205.80 ± 1.67 ng/g of dry mustard seeds) and erucic acid-lean (below 2%) extracts from an oilseed crop, (yellow and black mustard seeds) have been successfully obtained by ultrasonication-assisted-extraction in ethanol-water. Fourier-transform infrared spectroscopy and liquid chromatography-mass spectrum analyses have confirmed the presence of phytomelatonin along with tocopherol, ascorbic acid, limonene and linalool in the extract. Field emission scanning electron micrographs confirmed the cavitational effects of sonication on mustard seed matrices. Electron paramagnetic resonance spectroscopy established the strong antioxidant activities (72.25-75.49%) of the extracts foregoing erroneous spectrophotometric result of pan assay interference compounds. A synergistic effect value of 1.13 (greater than unity) confirmed synergistic co-existence of the antioxidants in the extract. This study interestingly revealed that an antioxidant synergy could be obtained by classical reductionism. Acute oral toxicity of the extracts were found to be greater than 5000 mg/kg body weight of rats. The extracts are perfectly safe to be utilized as antioxidative food supplements. © Association of Food Scientists & Technologists (India) 2019.Originating from New Zealand manuka honey distinguishes itself from other honeys. The purpose of this study was to compare the antioxidant and antimicrobial properties of manuka honey and selected Polish honeys. AS1842856 purchase Antioxidant capacity, total polyphenol and total flavonoid content were determined. Furthermore, the antimicrobial activity and the Minimum Inhibitory Concentration (MIC) were evaluated. Obtained results demonstrated that manuka honeys possessed relatively high antioxidant capacity compared to the other, Polish honeys. It was only honeydew honey that achieved comparable antioxidant properties to manuka honeys. The findings were supported by the results of microbial assays. Manuka MGO-250 and MGO-400, alongside honeydew honey, showed a stronger antimicrobial effect against Gram(+) than against Gram(-) bacteria. Moreover, the MIC-values, expressed as an inhibin number, proved the high antibiotic activity of manuka honey against the strains of Staphylococcus aureus and Enterococcus faecalis. Research concerning the influence of manuka honey on human health should be continued. © Association of Food Scientists & Technologists (India) 2019.The oil yield, fatty acid (FA) composition, physicochemical, quality characteristics and thermal properties were studied in flax, perilla, and basil seed oils cultivated in Iran. Also the similarities and differences among these seed oils were investigated using principal component analysis (PCA). The results indicated that perilla seed oil contained the highest lipid content followed by flax and basil seed oils. The n-6/n-3 FA ratios of these oils had a range of 0.190-0.320, which was notably lower than those of most vegetable oils. Trilinolenin as the predominant triacylglycerol in the studied flax, perilla, and basil seed oils was found at 21.3, 32.0, and 27.5%, respectively. The bioactive compounds, namely tocols, phytosterols, and total phenolics, present in basil and perilla oils were higher than those of flax seed oil. The results of differential scanning calorimeter indicated that the thermal properties of these seed oils were varied, with lower melting and crystallization peak temperature for perilla and basil seed oils.
