RG-I rich pectic polysaccharide is common in fruit and vegetable and possesses health benefits. However, it is removed during commercial pectin production because of poor gelling properties. Synergistic gelation can improve rheological properties of RG-I pectic polysaccharide and expand its application in functional food hydrocolloids. In the study, RG-I rich pectic polysaccharides at different degree of esterification was extracted from citrus membrane by sequential mild acidic (0.4% HCl, 28 °C) and alkaline (0.6% NaOH, 32 °C) treatment. The pectic polysaccharide from acid water (PA) composes of 41% RG-I and 44% HG with DM of 45%, while the pectic polysaccharide from basic water (PB) composed of 63% RG-I and 19% HG with DM of 15%. PA/PB blend gel under CaCO3-glucono-δ-lactone system showed improved rheological properties compared with pure gels. Ca-bridges connected pectin aggregates and promoted the three-dimensional structure of PA/PB blend gels, while neutral sugar side-chains prompted hydrogen bonds and strengthened gel network.This study investigated the effect of ultrasonic treatments on the properties and stability of the water-in-oil (W/O) emulsion of Pulicaria jaubertii (PJ) extract. The study used different ultrasound powers (0, 100, 200, 400, and 600 W) at two storage degrees (4 and 25 °C) for 28 days. The findings showed that the emulsifying properties were improved to different extents after ultrasonic treatments. The treatment at 600 W showed optimum particle size, polydispersity index, emulsifying property, viscosity properties, and release of total phenolic content than the other powers. However, the ultrasonic power of 400 W gave positive effects on creaming index and antioxidant release compared to 600 W. The emulsion stored at 4 °C presented higher stability than that stored at 25 °C during the 28 days of storage. Microscopically, the increase in sonication power up to 600 W reduced particle size and decreased flocculation, thus resulted in stable emulsions, which is desirable for its applications in food systems.Lipid oxidation products generated during meat digestion may contribute to the apparent epidemiological link between red meat intake and the risk of cardiovascular diseases and colorectal cancer. The aim of this work was to assess the lipid oxidation inhibitory activity of black, green, and pink pepper during cooking and in vitro digestion of meat. Peppers were characterized for their phenolic profiles by LC-ESI-MS and the antioxidant properties. Pink pepper showed the highest phenolic content and antioxidant activities. Then, the peppers were added to meat either before or after cooking, and the meat was subjected to in vitro digestion. Pink pepper added before cooking was the most effective, with an inhibition of 80% and 72% in lipid hydroperoxides and TBA-RS formation after digestion, respectively. These findings suggest that peppers, particularly pink pepper, can be used to minimize lipid oxidation in the gastro-intestinal tract and for the design of healthy dietary patterns.Fatty acids and nucleotides are major contributors of pork flavor, which are key quality traits influencing consumers' preference. In this study, we investigated the contents of nucleotides (inosinic acid, inosine, and hypoxanthine) and 26 fatty acids by high-performance liquid chromatography and gas chromatography in longissimus dorsi and semimembranous muscle of four breeds (Dongbei Min pig, Beijing Black pig, Wuzhishan pig, and DLY pigs). Combining with multivariate statistics, we found significant differences in the nucleotides and fatty acids compositions among the breeds and muscles. Furthermore, the content of total unsaturated fatty acids and DHA were higher in native pigs than crossbred pigs. This study provides a theoretical basis for understanding the composition of flavor precursor substances, as well as for the identification of different muscles.This study was to explore effects of hot air assisted or not assisted radio frequency (RF, 27.12 MHz, 1.4 kW) heating with different electrode gaps (100 mm, 120 mm, and 140 mm) on the water-holding capacity (WHC) of myofibrillar protein (MP) gel and to understand the underlying mechanism through chemical forces, water distribution, and structure. The results showed that the MP gels heated by RF (100 mm) had the highest WHC and uniform gel network structure. As for RF with 100 mm electrode gap, the increased ionic and hydrogen bonds might be conducive to the WHC compared to water bath heating, which was verified by Low-field nuclear magnetic resonance results that the free water converted into the immobilized water. Apoptosis inhibitor Raman spectroscopy results revealed that RF (100 mm) induced the self-assembly of β-sheet to α-helix, which conduced to the stable and ordered gel network structure.

To introduce a novel method for assessment of retinal vasculitis using swept-source OCT angiography (SS-OCTA).
Retrospective case series.
Patients with retinal vasculitis.
The subjects were identified among the clinic population and imaged with 12 × 12-mm SS-OCTA scans centered on the fovea. A custom retina segmentation superimposed the color retinal thickness map on a modified en face flow scan. Findings from en face flow scans were correlated with localized perivascular retinal thickening on B-scans. Results from SS-OCTA were compared with fluorescein angiography (FA) to examine the proportion of perivascular thickening to retinal vascular leakage or staining.
Twenty-one patients with retinal vasculitis underwent same-day FA and SS-OCTA. Visible retinal vascular leakage/staining on FA corresponded to increased perivascular retinal thickness on SS-OCTA in 17 patients. Five patients had a second examination with same-day FA and SS-OCTA after treatment of the vasculitis. Three of those 5 patients showed improved retinal vascular leakage/staining on post-treatment FA and decreased perivascular retinal thickness on SS-OCTA scans.
