Millet is underutilized in Europe, despite its advantages compared to other common cereals. In Asia and Africa, millet is mainly eaten in fermented form; its consumption has beneficial properties on human health. Three millet batches were compared in terms of free and bound phenols by High Performance Liquid Chromatography-Diode Array Detector-Mass Spectrometry (HPLC-DAD-MS). The richest one in terms of bound phenols was selected for testing via a basic (0.1 M NaOH) and an acidic (1.2 M H2SO4) hydrolysis, in which 149.3 and 193.6 mg/100 g of phenols were recovered, respectively. The ability of fermentation, with yeast and Lactobacilli, to increase the content of phenolic compounds was verified. Five withdrawalswere performed to verify the influence of fermentation time on the total phenolic content. The greatest phenolic content was observed after 72 h. Fermentation increased the cinnamic acids and flavonoids contents by approximately 30%. Vitexin and vitexin 2″-O-rhamnoside contents were significantly higher in the fermented millet; these compounds partially inhibit the protein tyrosine phosphatase enzyme, which is overexpressed in type-2 diabetes. A molecular dynamic simulation showed the two flavonoids to be allosteric inhibitors. The phenolic extract from fermented millet demonstrated a higher level of antioxidant protection on human erythrocytes by ex vivo cellular antioxidant activity in red blood cells. Moreover, we performed an expression analysis of genes involved in AsA metabolism to highlight the molecular mechanisms that can account for the difference between fruit explants and calli. Our work indicated that cultured tomato cells accumulate AsA well beyond the amount present in fruits and that the three factors under investigation and their interaction significantly influence AsA accumulation. The time in tissue culture is the main single factor and, different from the expectations for secondary metabolites, explants from unripe, mature green fruits provided the highest increase in AsA. Moreover, in controlled conditions the genetic differences between the ILs and the control genotype are less relevant for calli cultivated for longer time. Our work showed the potential of tomato cell culture to produce AsA and prompt further refinements towards its possible large-scale exploitation.Accurate quantitative mineralogical data has significant implications in mining operations. However, quantitative analysis of minerals is challenging for most of the sensor outputs. Thus, it requires advances in data analytics. In this work, data fusion approaches for integrating datasets pertaining to the mid-wave infrared (MWIR) and long-wave infrared (LWIR) spectral regions are proposed, aiming to facilitate more accurate prediction of SiO2, Al2O3, and Fe2O3 concentrations in a polymetallic sulphide deposit. Two approaches of low-level data fusion were applied to these datasets. In the first approach, the pre-processed blocks of MWIR and LWIR data were concatenated to form a fused data block. In the second approach, a prior variable selection was performed to extract the most important features from the MWIR and LWIR datasets. The extracted informative features were subsequently concatenated to form a new fused data block. Next, prediction models that link the mineralogical concentrations with the infrared reflectance spectra were developed using partial-least squares regression (PLSR), principal component regression (PCR) and support vector regression (SVR) analytical techniques.
