In this study, the phytochemical composition (fatty acids, Vitamin E, total polyphenols and flavonoids, amino acids, and minerals) of iron walnuts in China was investigated. The results showed that there were significant differences (p  0.5, p  less then  0.05) and negative (r  less then  - 0.5, p  less then  0.05) correlations were found between amino acids/minerals and amino acids/oleic acid, with the highest correlation coefficient (r = 0.742, p  less then  0.05) between Cu and tyrosine. In addition, based on the 12 phytochemical fingerprints selected by random forest, a geographical-origin identification model for iron walnuts was established, with a corresponding correct classification rate of 96.6%. Sweet bars are an easy marketing alternative due to their stability, low-cost of production and good acceptance, as well as flexibility to add other functional ingredients beneficial to health, such as shiitake.This study aimed at to formulate a food-grade nanoemulsion of tarragon essential oil (NEO) and investigate its antioxidant and antimicrobial properties. Oil in water NEO was formed by blending 10% of tarragon EO (TEO), 85% water, and a mixture of 5% surfactants, then antioxidant and antimicrobial activities were evaluated. The main components of TEO were estragole, beta-cis-ocimene, beta-trans-ocimene, and l-limonene. NEO droplet had a diameter of 50 nm and a zeta potential of - 30 mV. Results of free radical DPPH scavenging activity revealed that hydrogen donating capacity of the nanoemulsion was significantly higher than TEO and at 2.5 µg/mL concentration it showed complete inhibitory activity against DPPH. The ferric reducing potential was almost similar for TEO and NEO. NEO showed higher antibacterial potential against Staphylococcus aureus and Listeria monocytogenes and Shigella dysenteriae. The results of this work indicated that NEO had higher antioxidant and antimicrobial activity compared with free TEO.The main objective of this study was to test the efficiency of a wild cardoon (Cynara cardunculus L.) rennet, previously optimized by response surface methodology, in cheese making process; then to select the best brine concentration, leading to excellent cheese quality. Results showed that the optimized C. cardunculus rennet and chymosin produced curds with similar properties (yield, colour, texture, viscoelasticity), suggesting that this coagulant could replace successfully calf rennet. After brining at different salt concentrations (5, 7, 10 and 15%), we concluded that the use of 15% of salt in brine was an efficient way to reduce considerably the proteolysis level in C. cardunculus cheeses, stored for 28 d at 4 °C. At this salt level, the highest hardness, gumminess, viscoelasticity and yield of soft cheeses were also recorded. In conclusion, the satisfactory findings could open new opportunities to produce industrially the optimized C. cardunculus rennet and its cheeses in the Mediterranean area.The objective of present study was to study the effects of dietary ferrous sulfate (FeSO4) and time periods on Fe deposition, nutrients composition, color indices, water-holding capacity and oxidative stability of breast meat in broilers. This experiment was performed by 450 broilers in a 3 × 3 factorial design with 3 levels of supplemental Fe (0, 40 and 80 mg/kg) and 3 time periods (total, T from 1 to 42 days; grower and finisher, GF from 11 to 42 days and finisher, F from 25 to 42 days). The results showed that increasing the iron supplementation to 80 mg/kg increased the breast meat crude Protein. Adding 80 mg/kg of FeSO4 during the T period increased the iron content of breast meat compared to other dietary periods. Supplementation of 40 mg/kg FeSO4 during T and GF periods increased quadratically (P  less then  0.001) the L* value of meat compared to F period. Meat redness significantly increased by adding of 80 mg/kg iron into broiler diet. At 1 and 7 day postmortem, malondialdehyde (MDA) and total antioxidant capacity (T-AOC) of meat were measured for determination of lipid oxidation stability of tissue.
