Origin

Roast

The beans begin to steam when they are placed in the roaster for the first time due to their internal moisture. The "first crack" is a sound that signals the start of the roasting process. At this point the sugars begin to caramelize and the bound-up water is released. At the same time the structure of the bean breaks down and the oils move outwards from their small pockets. At the end of this phase most coffees are thought to be city roasts.
The beans are removed from any stones or other impurities that might have escaped the roaster. They are then examined by hand before being bagged and sold. Certain beans may have a dark spot known as a quaker. These beans did not change colour, and thus taste burnt, this is a common circumstance and does not mean the coffee is bad however it could be an unpleasant surprise in your cup of coffee.
