During the harvest time coffee farmers handpick cherries and transport them to washing stations in baskets. After the beans have been cleaned and sorted and dried in the sun, they are then roasted. This produces the cup with citrus and floral notes, and is the most well-known form of Ethiopian coffee. The roasting process further accentuates the floral and citrus aromas of this variety.
