However, an intermediate level of KGM addition (10 or 15 g kg
flour) still rendered dough with satisfactory properties.

A certain amount of KGM could enhance the thermal stability and anti-aging ability of wheat flour, improve the viscoelastic behavior, and decrease the hardness and gumminess of dough. In general, the mixing of flour and dough with KGM addition of 10 or 15 g kg
flour was of good quality. © 2021 Society of Chemical Industry.

The Kei apple is a tree found on the African continent. Limited information exists on the effect of alcoholic and acetous fermentation on the phytochemicals of Kei apple. The fruit has increased concentrations of l-malic, ascorbic, and phenolic acids among other compounds. Juice was co-inoculated with Schizosaccharomyces pombe (Sp) and Saccharomyces cerevisiae (Sc) to induce alcoholic fermentation (AF). Acetous fermentation followed AF, using an acetic acid bacteria (AAB) consortium.

Saccharomyces cerevisiae + Sp wines and vinegars had the highest pH. Total acidity, soluble solids and l-malic acid decreased during AF and acetous fermentation, and was highest in Sc wines and vinegars. Volatile acidity (VA) concentration was highest in Sp vinegars but was not significantly different from Sc and Sc + Sp vinegars. Gallic acid was highest in Sp wines and vinegars, whereas syringic acid was highest in Sc wines and vinegars. The Sc + Sp wines were highest in caffeic, p-coumaric, and protocatechuic acids. Schizos increase in gallic, caffeic, and p-coumaric acids. The AAB selected had minimal performance with respect to VA production in comparison to commercial vinegars. Acetic acid bacteria selection for acetous fermentation should therefore be reconsidered and the decrease of certain phenolic acids during acetous fermentation needs to be investigated. © 2021 Society of Chemical Industry.Biofortification refers to an approach to increase micronutrient concentrations in the edible parts of plants with increased bioavailability to the human population. Conventional, agronomic and transgenic breeding methods can be used to develop these biofortified crops, offering sustainable and cost-effective strategies. Pea has long been recognized as a valuable, nutritious food for the human diet, but there is a limited amount of information about it, which prevents the full micronutrient enrichment potential of this pulse crop to be reached. Considerations must include not only micronutrient concentrations but also the amount of the nutrient that can be absorbed by the consumer, after processing and cooking. Development of biofortified pea that retains nutrients during cooking and processing is not only essential for fighting micronutrient malnutrition, but also necessary to improve agricultural productivity. © 2021 Society of Chemical Industry.
Practical guidance for providers on preventing, detecting, and treating malnutrition in primary care (PC) and the community is limited. The purpose of this study was to develop nutrition care pathways for adult patients (aged ≥18 years) transitioning from hospital to community and community-dwelling older adults (aged ≥65 years) who are at risk for malnutrition.

A review of best-practice nutrition evidence and guidelines published between 2009 and 2019 was performed using PubMed and CINAHL. Findings were summarized into two draft care pathways by the Primary Care Working Group of the Canadian Malnutrition Task Force. Diverse stakeholders (n = 21) reviewed and suggested revisions at a 1-day meeting. Revisions were made and an online survey was conducted to determine the relevance and importance of discrete care practices, and to establish consensus for which practices should be retained in the pathways. Providers (e.g., dietitians, physicians, nurses; n = 291) across healthcare settings completed the surves.
Elemental selenium, as a new type of selenium supplement, can be prepared by microorganisms reducing inorganic selenium. In this study, Lactobacillus brevis JLD715 was incubated in broth containing different concentrations of sodium selenite (Na
SeO
).

The results showed that the bacterial biomass of L. brevis JLD715 decreased due to the inhibition of Na
SeO
. The cell membrane of L. brevis JLD715 treated with Na
SeO
was damaged, as evidenced by the reduction of intracellular ATP concentration, depolarization of cell membrane, reduction of intracellular pH and impairment of membrane integrity. In addition, we investigated the metabolism mechanism of Na
SeO
by L. brevis JLD715 based on transcriptome sequencing. A total of 461 genes were significantly differentially expressed under Na
SeO
treatment, of which 231 genes were up-regulated and 230 genes were down-regulated. https://www.selleckchem.com/products/SB-216763.html These genes were involved in pathways such as pyruvate metabolism, fatty acid biosynthesis, selenocompound metabolism and nucleotide-binding oligomerization domain-like (NOD-like) receptor signaling. Meanwhile, the genes related to sulfhydryl oxidoreductase, electron carrier proteins and transmembrane transport proteins synthesis were significantly up-regulated.

To sum up, the findings of this research will contribute to providing support for the application of L. brevis JLD715 in selenium-enriched functional foods. © 2021 Society of Chemical Industry.

The peel of the pomegranate fruit is rich in polyphenols with antioxidant properties. We investigated the preventive effect of pomegranate peel (PP) powder against dextran sulfate sodium (DSS)-induced lipid peroxidation in the small intestine of rats. Rats were allocated to four groups CONT group, fed a standard rodent diet; DSS group, fed a standard rodent diet and treated with DSS; as well as PP1%+DSS and PP5%+DSS groups, fed a standard rodent diet supplemented with either 1% or 5% of PP powder and treated with DSS. Rats of the four groups consumed their diets for 25 days. Lipid peroxidation was determined by measuring malondialdehyde (MDA) concentrations in plasma and MDA contents in the small intestine and liver. Glutathione/glutathione disulfide (GSH/GSSG) redox status and antioxidant enzyme activities were determined in the small intestine and liver.

MDA content was higher (P < 0.001) in the small intestines of the DSS group compared to the CONT group. MDA content was reduced (P < 0.001) in thduced small intestine pathogenesis. © 2021 Society of Chemical Industry.
The objective of this study was to assess the value of prehospital measurement of lactate level in blood for diagnosis of seizures in cases of transient loss of consciousness.

Between March 2018 and September 2019, prehospital lactate was measured with a point-of-care device by the emergency medical services in an area serving a population of 900000. link2 A total of 383 cases of transient loss of consciousness were identified and categorized as tonic-clonic seizure (TCS), other seizure, syncope, or other cause, according to the final diagnosis in the electronic medical records system. Receiver operating characteristic curve analyses were used to identify the optimal lactate cut-off.

A total of 383 cases were included (135 TCS, 42 other seizure, 163 syncope, and 43 other causes). The median lactate level in TCS was 7.0mmol/L, compared to a median of 2.0mmol/L in all other cases (P<.001). The area under the curve (AUC) of TCS vs nonepileptic causes was 0.87 (95% confidence interval [CI] 0.83-0.91). The optimal cut-off (Youden index, 67.8%) was 4.75mmol/L, with 79% sensitivity (95% CI 71-85) and 89% specificity (95% CI 85-93) for TCS.

Prehospital lactate can be a valuable tool for identifying seizures in transient loss of consciousness. For acceptable specificity, a higher cut-off than that previously demonstrated for hospital-based measurements must be used when values obtained close to the time of the event are interpreted.

Many people with dementia are cared for at home by unpaid informal caregivers, usually family members. Caregivers may experience a range of physical, emotional, financial and social harms, which are often described collectively as caregiver burden. The degree of burden experienced is associated with characteristics of the caregiver, such as gender, and characteristics of the person with dementia, such as dementia stage, and the presence of behavioural problems or neuropsychiatric disturbances. link3 It is a strong predictor of admission to residential care for people with dementia. Psychoeducational interventions might prevent or reduce caregiver burden. Overall, they are intended to improve caregivers' knowledge about the disease and its care; to increase caregivers' sense of competence and their ability to cope with difficult situations; to relieve feelings of isolation and allow caregivers to attend to their own emotional and physical needs. These interventions are heterogeneous, varying in their theoretical fof usual services in the study settings. The thermal conversion of woody biomass is increasingly critical for the development of the energy processing technologies and fire safety engineering. The combustion characteristics, kinetics, and thermodynamics of pine wood were characterized through a thermogravimetric analyzer in the air atmosphere. There were two apparent peaks in the derivative TG curves for pine wood. The combustion process of pine wood was divided into two stages. Therein, the first stage occurring in the conversion degree range of 0-0.6 may be considered a one-step reaction. It was easier for pine wood to decompose under air than under nitrogen. Moreover, the first stage of pine wood combustion may be characterized by the diffusion model g(α) = [1 - (1 - α)1/3]2. The kinetic modeling showed a good agreement between the predicted and experimental conversion degree curves. In addition, the high comprehensive combustion index of pine wood at 10 K min-1 (6.73 × 10-7 %2 min-2 K-3) showed its great potential for bioenergy generation. Besides, both the value of ΔH and ΔS exhibited similar patterns with the activation energy value versus conversion degree, while the ΔG value almost remained at a positive constant with conversion degree. The average ΔH, ΔG, and ΔS value was nearly equal under different heating rates. The focus of this research is spectral shifting of light using phycocyanin solution extracted from the blue-green microalga Spirulina platensis in order to increase biomass productivity of the green microalga Chlorella sp. Also, lipid and chlorophyll content of the green alga was investigated. With regard to the shift of the spectrum with the phycocyanin solution, a double layer flat panel photobioreactor and two different spectral shifting strategies were used. In each strategy, the effect of two different concentrations of the solution was investigated. In the first strategy, the light passes through the chamber containing the solution and then enters the microalga culture chamber. In the second strategy, the light first enters the culture chamber and then enters the chamber containing phycocyanin pigment. The results showed that the use of phycocyanin pigment by both strategies increased the biomass productivity (P) and the specific growth rate (μmax) with a significant difference compared to the control system; the increase in P for first strategy was up to about 69%.
