Soybean protein extraction was evaluated using conventional (alkaline phosphate buffer) and ultrasonication assisted methods. The impact of the extraction method on protein yield, chemical composition, and structural properties of the protein isolates was assessed. To evaluate perceived umami intensity (PUI) in seven categories of foods, modified two-alternative forced choice (2-AFC) method with monosodium glutamate as reference was applied. Meanwhile, we explored whether equivalent umami concentration (EUC) by chemical analysis and electronic tongue (E-tongue) are applicable in PUI quantification. The results indicated that EUC was appropriate in quantifying PUI of samples from meat, dairy, vegetable and mushroom groups (r = 1.00, p 0.99) were established in separated food categories by back propagation neural networks, where E-tongue data were set as input. This study explored the effectiveness of the three methods in evaluating the PUIs of various foods, which provides multiple choices for the food industry.Human milk (HM) modifications over time represent an important issue. This work proposed to evaluate the changes in HM during one-year storage through total lipids (TL) degradation and portable near-infrared (NIR) spectrometer combined with chemometrics. Colostrum, transition, and mature stages were obtained from donors and considered in the raw and pasteurized forms. Principal component analysis in TL content showed changes in the mature stages for both forms after 75 days. Multivariate curve resolution with alternating least squares in NIR spectral data reveals a decrease in protein and triacylglycerol contents while an increase in free fatty acids (palmitic acid) contents were observed through the storage after around 5-6 months. Therefore, more than 5-6 months of storage suggest possible biochemical changes in the HM nutritional composition. Moreover, the chemometrics investigation was crucial in extracting information, bringing coherent results, and helping to understand the chemical changes in human milk during storage.This study proposes a preliminary assessment of the homogeneity and stability through digital image acquisition of a candidate for mechanically processed pumpkin seed meal reference material, exploring the concepts of homogeneity curve and the analysis of texture characteristics by Continuous-Level Moving Block through Robust Principal Component Analysis. This innovative methodology allowed us to examine the percentage of homogeneity in a set of samples, revealing an average of 41% with only one outlier in relation to the entire sample, indicating low homogeneity. In the stability study carried out after storing samples for 12 months at different temperatures, 83% of the samples were considered regular and 17% were outlier, which means that most of them were considered stable. Therefore, this methodology is useful for screening samples for homogeneity, by textural analysis, and detected non-homogeneity can be corrected in advance for quantification by standard protocols.As stingless bee honey (SBH) is gaining in popularity in the Malaysian market, it is now prone to adulteration. The higher price of SBH compared to floral honey has led to the use of unusual adulterants such as vinegar and even floral honey to mimic the unique taste and appearance of SBH. Since the current AOAC 998.12 method fails to detect these adulterants as their δ13C values are in the range for C3 plants, untargeted 1H NMR metabolomics was proposed. Principal component analysis of SBH 1H NMR fingerprints was able to distinguish authentic SBHs from adulterated ones down to 1% adulteration level for selected adulterants. Discriminant analysis showed promising results in distinguishing the preliminary datasets of authentic SBHs from the adulterated ones, including discriminating SBHs adulterated with different adulterants derived from C3 and C4 plants. Hence, to assure any emerging adulterant can be detected, all 1H NMR regions should be considered.In this work, we demonstrate a novel solid-state electrochemiluminescence (ECL) sensor based on the Ru(bpy)32+@terbium-guanosine monophosphate infinite coordination polymer network ((Ru(bpy)32+@Tb-GMP ICPn). Comparing with the traditional luminescence of Ru(bpy)32+ observed in a liquid system, the proposed method of encapsulating Ru(bpy)32+ into ICPn for immobilization greatly improves the ECL signal and efficiency, which is attributed to the unique porous structure and large specific surface area of ICPn. Moreover, the solid-state Ru(bpy)32+ ECL sensor has good biocompatibility and low toxicity. Taking histamine (HA) as a detection model, a good linear relationship between ECL intensity and logarithm of HA concentration was obtained with a low detection limit of 17 nM, and satisfactory results were obtained for detecting HA levels in fish samples as well. The proposed solid-state Ru(bpy)32+ ECL sensor has great application prospects in the safety of food.The effect of different levels of allspice and perilla frutescens seed extract (ASE and PSE) on the formation of heterocyclic amines (HCAs) in pan-fried chicken meat patties and the bioactive components found in ASE and PSE that contribute to the mitigation of HCAs were investigated in this study. DPPH radical scavenging activity was evaluated and the results indicated that APSE (ASE + PSE) showed the highest capacity to scavenge free radicals, and the most effective inhibition of HCAs formation. In this study we pursued the development of an application software (App) based on Visual Image Analysis, useful for SEUROP and Fat Cover grading of bovine carcasses using a smartphone. The App was trained using 500 bovine carcasses. Carcass conformation and Fat Cover classes were assessed in parallel by expert evaluators and by App. Overall, a high correspondence was found between the measurements of carcasses parameters by operators and by the App, as high as 84.2% for SEUROP and 86.4% for the Fat Cover. In the 15.8% of samples with discordant SEUROP evaluation, and in the 13.6% of samples with discordant Fat Cover evaluation, the operators' and App measurements deviated by only one class. All values also aligned with the requirements expected by the current legislation for the use of automated and/or semi-automated systems able to determine the market value of carcasses.The clinical syndromes of Progressive Supranuclear Palsy (PSP) may be mediated by abnormal temporal dynamics of brain networks, due to the impact of atrophy, synapse loss and neurotransmitter deficits. We tested the hypothesis that alterations in signal complexity in neural networks influence short-latency state transitions. Ninety-four participants with PSP and 64 healthy controls were recruited from two independent cohorts. All participants underwent clinical and neuropsychological testing and resting-state functional MRI. Network dynamics were assessed using hidden Markov models and neural signal complexity measured in terms of multiscale entropy. In both cohorts, PSP increased the proportion of time in networks associated with higher cognitive functions. This effect correlated with clinical severity as measured by the PSP-rating-scale, and with reduced neural signal complexity. Regional atrophy influenced abnormal brain-state occupancy, but abnormal network topology and dynamics were not restricted to areas of atrophy. Due to its excellent prognosis, myxedema madness should always be considered a differential diagnosis in new onset psychosis.The high prevalence of work-related musculoskeletal disorders (WRMSDs) has been a concern in the meat-processing industry, owing to the manual nature of the work and the high upper-limb and neck exposure to movements that can lead to WRMSD. The ability to perform an accurate and fast assessment of WRMSDs remains a challenge in industrial environments. Most assessment methodologies rely on standard survey-based methods, which are time- and labor-intensive. In this paper, we present an application of inertial measurement units (IMUs) to measure human activity, and the use of artificial intelligence and machine learning techniques to perform task classification and ergonomic assessments in workplace settings. We present the results obtained by using simple low-cost IMUs worn on slaughterhouse worker wrists to capture information on their movements. We describe the use of this information to detect the risk factors of the wrists/hands that can lead to WRMSDs. The results indicate that by using low-cost IMU-based sensors on the wrists of slaughterhouse workers, we can accurately classify the sharpness of the knife and predict the worker RULA score.
