This study investigated the effects of modified atmosphere packaging (MAP) and storage temperature (0 °C and 4 °C) on the volatile compounds (VOCs) of Cape hake (Merluccius capensis) fish fillets as a predictor of shelf life and quality. Fresh Cape hake fillets were packaged under active modified atmosphere (40% CO2 + 30% O2 + 30% N2) and passive modified atmosphere (0.039% CO2 + 20.95% O2 + 78% N2) with or without an absorbent pad and stored at 0 °C and 4 °C for 12 d. The results obtained demonstrated that changes in VOCs and concentration were significantly (p < 0.05) influenced by MAP conditions, storage temperature and duration. A total of 16 volatiles were identified in the packaged Cape hake fillets 4 primary VOCs and 12 secondary VOCs. The spoilage VOCs identified include tri-methylamine (TMA) (ammonia-like), esters (sickeningly sweet) and sulphur group (putrid). The concentration of secondary VOCs increased continuously during storage. Active-MA-packaged fillets performed better and had lower TMA values of 0.31% at 0 °C on day 12 in comparison to 7.22% at 0 °C under passive on day 6. Ethyl acetate was detected in passive-MA-packaged fillets stored at 0 °C on day 3, and the levels increased to 3.26% on day 6, while active-MA-packaged fillets maintained freshness. This study showed that in conjunction with TMA, VOCs such as esters and sulphur-related compounds could be used as spoilage markers for Cape hake fish fillets.The attention regarding individuals' external appearance and social identity provides a unique perspective to reveal the cause of their behavior. This study explored the formation mechanism of individual food waste behavior in China from the perspective of appearance image construction and social image construction, especially considering the role of emotion, education level, and body mass index (BMI) in relationship transmission. This study collected data by questionnaire in 133 cities in 32 provinces of China. By using the methods of factor analysis, correlation analysis, and hierarchical regression analysis, the results show that individuals with high need for external appearance image (r = 0.242, p < 0.001) and social image construction (r = 0.31, p < 0.001) are more likely to waste food. In terms of transmission mechanisms, positive emotions (e.g., excitement) (β = 0.104~0.187, 95% confidence interval) and negative emotions (e.g., anxiety and disgust) (β = 0.08~0.177, 95% confidence interval) are the intermediary factors of image construction affecting food waste behavior, and emotional fluctuations can aggravate individuals' food waste behavior. In terms of interaction effects, BMI significantly positively regulates the predictive effect of image construction on food waste behavior, while the level of education buffers this predictive effect. Results showed that after combined modification, the solubility of peanut protein at a pH range of 2-10 was significantly improved. Moreover, the Turbiscan stability index of modified protein in the acidic solution was significantly decreased, indicating its excellent stability in low pH. Shoulder muscle tissue contained the highest amount of intramuscular fat, collagen/protein ratio, total and insoluble collagen, and the lowest percentage of soluble collagen. The cooked meat from hind leg contained the lowest amount of total, soluble and insoluble collagen. The percentage of collagen fractions in cooked meat was comparable in all cuts (p > 0.05). The toughest meat was from the shoulder, followed by the hind leg, and the tenderest meat was from the loin (p < 0.01). Shear force of cooked meat was correlated positively with the amount of total collagen, insoluble collagen and its percentage in muscle tissue (0.597, 0.594 and 0.499, p < 0.01), as well as negatively with percentage of soluble collagen (-0.594, p < 0.001). No correlations between the shear force and the content of total collagen and its fractions in cooked meat were found. In conclusion, our results indicate that the amount of total collagen and its fractions in raw muscle tissue of beaver is a better tenderness predictor for cooked meat than their values in heat-treated meat.In order to achieve rapid and precise quantification detection of carbendazim residues, surface-enhanced Raman spectroscopy (SERS) combined with variable selected regression methods were developed. A higher sensitivity and greater density of "hot spots" in three-dimensional (3D) SERS substrates based on silver nanoparticles compound polyacrylonitrile (Ag-NPs @PAN) nanohump arrays were fabricated to capture and amplify the SERS signal of carbendazim. Four Raman spectral variable selection regression models were established and comparatively assessed. The results showed that the bootstrapping soft shrinkage-partial least squares (BOSS-PLS) method achieved the best predictive capacity after variable selection, and the final BOSS-PLS model has the correlation coefficient (RP) of 0.992. Then, this method used to detect the carbendazim residue in apple samples; the recoveries were 86~116%, and relative standard deviation (RSD) is less than 10%. In this study we determined the lipidomics of subcutaneous fat in MSTN single copy mutant pigs and evaluated the variations in lipid contents of the subcutaneous fat from MSTN+/- and wild type Large White (LW) pigs via ultra-performance liquid chromatography-quadrupole/Orbitrap-mass spectrometry (MS). The results showed that the quantities of glycerolipids, sphingolipids, fatty acyls and glycerophospholipids were significantly changed, particularly, the molecular diacylglycerol in glycerolipids, long-chain unsaturated fatty acids, and ceramide non-hydroxy fatty acid-sphingosine in sphingolipids were remarkably increased in the MSTN+/- group. Due to their positive bioavailability demonstrated by previous researches, these three lipids might be beneficial for human health. Further, the results of our study confirm that MSTN participates in the regulation of fat metabolism, and reduced expression of MSTN can ultimately influence the accumulation of lipid contents in the subcutaneous fat of pigs.Lactic acid bacteria (LAB) synthesize exopolysaccharides (EPS), which are structurally diverse biopolymers with a broad range of technological properties and bioactivities. In this study, meat analogues made from faba bean protein isolate (FPI) and concentrate (FPC) blends were produced using high moisture extrusion. The aim of this study was to investigate the effect of the FPI content (FPIc), feed water content (FWC), and temperature of the long cooling die (LT) during extrusion on the mechanical and physicochemical properties as well as on the structure of the meat analogues. Increased FPIc resulted in higher values in hardness, gumminess, chewiness, and cutting strengths as well as in darker colour and decreased water absorption capacity. The effect of increased FWC on these properties was weaker and the opposite. Images from microtomography revealed that higher FPIc led to a less organised fibrous structure. In conclusion, fibrous structures can be achieved by utilising a mixture of faba bean protein ingredients, and a higher FPC content seemed to promote fibre formation in the meat analogue.
