The subject of the present research is the evaluation of health-promoting properties caused by the presence of some vitamins as well as the antioxidative potential of the honeybee drone brood homogenate (DBH). The study used 139 homogenate samples obtained from various apiaries and collected over 3 years, three times during each beekeeping season. Samples differed in terms of varroa infestation, stage of brood development, location of the apiary, and the degree of environmental contamination. The content of ascorbic acid, α-tocopherol, all-trans-retinol, and coenzyme Q10 in the tested samples was determined through the application of HPLC/DAD/UV and LC/QQQ/MS methods. The antioxidant potential of samples was assessed using the Folin-Ciocalteu and DPPH methods.Rapadura is an artisanal candy obtained from concentrated sugarcane juice. In this study, a differentiation between South American rapadura producers has been tried using a Kurtosis-based projection pursuit analysis (kPPA) concerning essential minerals, acrylamide, moisture contents, pH, and color. These parameters revealed significant inter- and intra-country differences. Based on the employed measurements, a multivariate exploration with kPPA extracted information from rapadura even though it is a very artisanal product and was effective in separating classes, especially Brazilian and Ecuadorian rapadura, where principal component analysis failed. Moreover, ellipse confidence regions showed significant differences between non-organic and organic rapadura from Colombia and Peru in granulated form. From a chemometric point of view, the application of kPPA can be used in cases when other metrics (as based on the variance) fail and can be useful in the exploratory analysis of complex multivariate chemical data.The gluten proteins of wheat are major causative agents of harmful immune responses. This study investigated the effects of high hydrostatic pressure (200, 300, 400, and 500 MPa), treatment time (5-25 min) and protein concentration (1%-5% protein weight/volume) on the structures underlying the allergenicity wheat gluten. The results showed that a combination of 400 MPa, 20 min treatment time and 3% protein reduced the wheat gluten allergenicity by 72.2%. Moreover, a Western blotting showed that the allergenicity of 26, 28, 48, 68 kDa and high molecular weight glutenin was sharply reduced. Fourier infrared spectroscopy and surface hydrophobicity indicated that gluten molecules aggregated after HHP treatment. Intermolecular forces indicated that gluten aggregated mainly through hydrophobic interactions and disulfide bonds but not by hydrogen bonds after HHP treatment. These results suggest that structural changes contributed to the reduction of wheat gluten allergenicity and that HHP may enhance safety for susceptible individuals.Herein, corn starch samples with different moisture contents (native corn starch, 30, 35, 40, 45, and 50%) were prepared by twin-screw extrusion, and the structural and physical properties were analyzed and correlated. Scanning electron microscopy observed the morphology, attenuated total reflection-Fourier transform infrared spectroscopy investigated the double helix structure, X-ray diffraction analyzed the crystal region, ion chromatography observed the chain length distribution, and rapid viscosity analyzer measured the viscosity of corn starch samples. We found that the corn starch crystallinity, degree of order, and double helix degree decreased with increasing moisture content. The moisture content has a crucial role in the peak viscosity, breakdown, final viscosity, and setback in pasting property experiments. With the increase in moisture content, the longer chain was transformed into a shorter chain, and the dispersion of molecular weight distribution continuously increased. Salicylic acid delayed deterioration of blueberry fruit and enhanced its resistance to disease during storage.This research aimed to apply nanotechnology for nanoformulation of Laurus nobilis essential oil (EO) by ultrasonic emulsification method and characterization of nano-form particle size, viscosity, polydispersity index, thermodynamic stability, and surface tension. The antimicrobial activity of laurel EO nanoemulsion (LEON) and laurel EO was also investigated against a panel of ten food-borne pathogens and fish spoilage bacteria. The GC-MS analysis of EO revealed that 1,8-Cineole was the main volatile compound. According to disc-diffusion results, LEON was more effective against Gram-positive pathogen bacteria of Staphylococcus aureus and Enterococcus faecalis than EO. Laurel oil demonstrated a higher inhibitory effect against fish spoilage bacteria (6.19 to 18.5 mm). The MICs values of LEON and laurel EO ranged from 6.25 to >25 mg/mL and from 1.56 to >25 mg/mL, respectively. Nanoemulsion and oil exhibited the best bactericidal activity against Pseudomonas luteola. Therefore, LEON can be developed as a natural antimicrobial agent in food industry.High value-added utilization of different aquatic by-products is an increasingly urgent issue in aquatic science and industry. In this work, the effects of extraction methods on the molecular characteristics, structural properties, functional properties, and Pickering emulsion stabilization behaviors of silver carp fin gelatins were comprehensively studied. It would be also useful for the high value-added utilization of aquatic by-products and gelatins.The work explored the process of ultrasound-assisted adsorption/desorption to efficiently purify jujube peel flavonoids (JPFs) using macroporous resins (MRs). The impact of ultrasound power and temperature on the adsorption/desorption features of JPFs on MRs were studied. The maximum adsorption (80.21 ± 2.11 mg/g) /desorption (76.22 ± 1.68 mg/g) capacity of total flavonoids content were obtained. link2 The pseudo-second-order kinetic and Freundlich isotherm models better described the whole process of ultrasound-assisted adsorption. The adsorption process was spontaneous, physical, and dominated by multilinear intraparticle diffusion. Ultrasound mainly enhanced the adsorption capacity by strengthening the formation of hydrogen bonds and increasing the surface roughness of MRs. Besides, the principal individual flavonoid ((+)-Catechin, (-)-Epicatechin, Rutin, Quercetin-3-O-robinobioside) content of JPFs in ultrasound treatment was 2-3 times that of shaking treatment, and biological activities were significantly increased. Turbidity analysis combined with sensory evaluation could be a powerful tool for identifying critical compounds responsible for the astringent taste.This study examined the combined effect of hydraulic retention time (HRT), organic loading rate (OLR) and heat pretreatment of manure (70 °C, 1 h) on the fate of E. coli, enterococci, C. perfringens, C. difficile, and on chemical parameters (volatile fatty acids and ammonia) that may inactivate pathogens. Semi-continuous mesophilic anaerobic reactors were fed with pig manure and horse feed. The operating conditions were 2, 3, 4 COD.L-1.d-1 (OLR), 24, 35, 46 days (HRT) and use or not of a thermal pretreatment. The levels of the chemical parameters did not reach concentrations capable of inactivating the four bacteria. Anaerobic digestion led to a Log10 removal > 3 (E. coli), 0.9-2.1 (enterococci), 0.1-0.6 (C. perfringens) and 0-1 (C. difficile). Increasing HRT only reduced the concentration of E. coli in the digestate. Increasing OLR reduced the Log10 removal of enterococci and C. difficile. The heat pretreatment led to non-detection of E. coli in the digestate, reduced the concentration of C. perfringens by 0.
