Among all sweet potato varieties analyzed, Peruvian variety '199062.1' showed the highest ferric reducing antioxidant power (2,2-diphenyl-1-picryl-hydrazyl-hydrate) free radical scavenging activity, and [2,2'-azinobis-(3-ethylbenzothiazoline-6-sulfonate)] scavenging activity. Among the local sweet potato varieties, 'Bophelo' has the greatest potential for commercialization as it is the richest source of CQA."Fo Tiao Qiang" is a famous dish with Chinese characteristics. It is delicious, rich in materials, and high in nutritional value. Through physical and chemical analysis, electronic tongue, gas chromatography-ion mobility spectroscopy, and other technologies, the present study explored the quality characteristics and flavor differences of Fo Tiao Qiang by using different thawing methods (natural thawing, ultrasonic thawing, microwave thawing, and water bath thawing). The results show that the protein content was slightly higher in Fo Tiao Qiang with ultrasonic thawing than others. The fat content of the microwave-thawed Fo Tiao Qiang was significantly lower than the other three kinds of samples. After ultrasonic thawing, the number of free amino acids in the samples were the highest and the umami taste was the best. Compared with natural thawing, most of the flavor substances decreased in ultrasonic thawing, microwave thawing, and water bath thawing. However, several substances increased, such as alpha-terpineol, beta-phenylethyl alcohol, phenylacetaldehyde, cis-rose oxide, isobutyl acetate, and 2-3-pentanedione. This study revealed the changing laws of different thawing methods on the quality characteristics and flavor characteristics of Fo Tiao Qiang. It provides theoretical guidance for the industrial production and quality control of Fo Tiao Qiang.Cod liver oil (CLO) is an essential source of healthy ω-3 fatty acids to be employed in functional meals. However, its autoxidation sensitivity, solubility, and odour present it as challenging to handle. Its encapsulation might mitigate these problems. This research studied using alginate/lupine protein as a wall material for CLO encapsulation as well as to characterise CLO microcapsules for their size, sphericity factor, encapsulation efficiency, morphology (scanning electron microscopy), in vitro release, and thermal stability. In this study, the oxidative stability, quality parameters, and sensory attributes of meatballs enriched with free CLOs and encapsulated CLOs throughout storage at 4 ± 1 °C for 16 days were assessed. The CLO microspheres had a homogeneous round shape, a diameter of 0.82 ± 0.06 mm, a sphericity factor of 0.092 ± 0.01, an encapsulation efficiency of 95.62% ± 1.13%, and an accumulative release rate of 87.10% after 270 min in the stimulated gastrointestinal conditions. Additionally, it was discovered that encapsulated oil was more stable than free CLOs to heat treatments (70-100 °C, 24 h). pH, thiobarbituric acid-reactive substances, peroxide value, conjugated dienes value, and carbonyl content of meatballs enriched with microencapsulated CLOs were significantly lower when compared to free CLOs and/or control samples. CLO microcapsules improved the sensory characteristics of meatballs throughout storage; however, meatballs directly containing CLOs were rejected. Thus, the viability of alginate/LPI complex microcapsules containing CLOs to enrich meat products subjected to storage with refrigeration could be indicated without any change in the characteristics.The hydroponic production of microgreens has potential to develop, at both an industrial, and a family level, due to the improved production platforms. The literature review found numerous studies which recommend procedures, parameters and best intervals for the development of microgreens. This paper aims to develop, based on the review of the literature, a set of procedures and parameters, included in a test protocol, for hydroponically cultivated microgreens. Procedures and parameters proposed to be included in the trial protocol for evaluating platforms for growing microgreens in hydroponic conditions are (1) different determinations in controlled settings (setting the optimal ranges) and in operational environments settings (weather conditions in the area/testing period); (2) procedures and parameters related to microgreen growth (obtaining the microgreens seedling, determining microgreen germination, measurements on the morphology of plants, microgreens harvesting); (3) microgreens production and quality (fresh biomass yield, dry matter content, water use efficiency, bioactive compound analysis, statistical analysis). Procedures and parameters proposed in the protocol will provide us with the evaluation information of the hydroponic platforms to ensure number of growing days to reach desired size; yield per area, crop health, and secondary metabolite accumulation.This study aimed to explore the effect of adding different concentrations (0, 0.01%, 0.03%, and 0.05% (w/w)) of tea polyphenol palmitate (TPP) in the oil phase on the emulsifying properties of 5 and 10 mg/mL myofibrillar protein (MP). Particle size results revealed that the flocculation of droplets increased as TPP concentration increased and that droplets in 5 mg/mL MP emulsions (25-34 μm) were larger than in 10 mg/mL MP emulsions (14-22 μm). The emulsifying activity index of 5 mg/mL MP emulsions decreased with increasing TPP concentration. The micrographs showed that the droplets of MP emulsions exhibited extensive flocculation at TPP concentrations >0.03%. Compared with 5 mg/mL MP emulsions, 10 mg/mL MP emulsions showed better physical stability and reduced flocculation degree, which coincided with lower delta backscattering intensity (ΔBS) and Turbiscan stability index values. The flow properties of emulsions can be successfully depicted by Ostwald-de Waele models (R2 > 0.99). The concentrations of TPP and protein affect the K values of emulsions (p < 0.05). Altogether, increased protein concentration in the continuous phase could improve emulsion stability by increasing viscosity, offsetting the adverse effects of TPP to a certain extent. This study is expected to promote the rational application of TPP in protein emulsion products of high quality and acceptability.Chestnuts are an important food crop commonly used as a food ingredient due to their nutritional properties and potential health benefits. In Korea, chestnuts have been crossbred to develop cultivars with insect resistance and high productivity, producing multiple chestnut varieties. This study classified 17 Castanea crenata cultivars produced in Korea according to origin and harvest time and determined the metabolites in chestnut kernels using 1H nuclear magnetic resonance spectroscopy. The 17 C. crenata cultivars were divided into four groups based on their geographic origin Korean native, Korean hybrid, Japanese native, and Japanese hybrid. The cultivars were also divided into three groups depending on their harvest period early-ripening cultivar, mid-ripening cultivar, and late-ripening cultivar. The partial least squares-discriminant analysis score plot revealed differences among the groups. Identified metabolites, including amino acids, organic acids, and sugars, contributed to discriminating the origin and harvest time of the C. crenata chestnut kernels. Significant differences were observed, mainly in amino acids, which suggests that the composition of amino acids is one factor influenced by both the origin and harvest time of C. crenata. These results are useful to both growers and breeders because they identify the nutritional and metabolic characteristics of each C. crenata cultivar.Raw foodstuffs have been marked as a healthier alternative in the context of nutrient content and are becoming more popular with consumers. Thermally untreated foods may represent a microbiological risk connected with the possible presence of antimicrobial resistance. The aim of this study was to prove that popular raw food beverages such as smoothies and raw milk may be a source of antibiotic-resistant coliform bacteria and resistant genes. The majority of antibiotic-resistant isolates (110) were identified as Enterobacter spp., Escherichia coli, and species of Klebsiella spp., predominantly β-lactam and chloramphenicol resistant. Multidrug resistance has been registered in one-third of resistants. Overproduction of efflux pumps was clarified in 8 different bacteria. The majority of resistant isolates were strong biofilm producers. Antibiotic resistance gene blaOXA was detected in 25% of isolates, especially in E. coli. Resistance genes blaTEM and blaSHV were detected in 19% and 14%, respectively. This is the first study to point out that popular raw drinks such as smoothies or raw milk, besides their nutrient benefits, could represent a reservoir of antibiotic-resistant bacteria as well as antibiotic resistance genes. According to this, raw drinks could contribute to the dissemination of antibiotic resistance in the human gastrointestinal tract and environment.Global awareness of the 2030 Sustainable Development Goals (SDGs) has heightened the importance and role of food systems' transformation in accelerating countries' progress to achieve such goals in a timely manner. The agricultural and food systems' transformation goal is to build resilience to vulnerabilities, shocks, and diseases such as undernourishment and obesity. The objective of this study is to specify the agricultural and food systems' factors that contribute to reducing the impacts of undernourishment and obesity in selected populous and high-income countries. This study used panel data from 2000 to 2020, applying fixed and random-effect econometrics models to conduct the analyses. Results indicated that the per capita Gross Domestic Product (GDP), level of urbanization, and flood losses at food retail from a food systems perspective were the most influential factors in the prevalence of undernourishment. Meanwhile, the supply of fatty food was the significant nutrition variable affecting undernourishment. The cereal import dependency, per capita GDP, percentage of food imports from the value of food export, and value of domestic food production factors were the influential food system variables affecting the prevalence of obesity. Cereal import dependency and dietary energy supply are the significant factors affecting the prevalence of obesity. This study recommended a set of policy actions to address malnutrition, including sustainable and balanced food and nutrition systems' transformation, food trade openness, and efforts to reduce adversary impacts of urbanization.Asian carp is a general designation for grass carp, silver carp, bighead carp, and black carp.
