The absorption (μa) and scattering (μs') properties of PSPs during drying were determined at 400-1050 nm using a single integrating sphere system. The absorption spectra were marked by pronounced anthocyanin peaks around 545 nm, and very small water peaks around 980 nm. The average μs' was relatively flat in the 670-1000 nm range, which increased as drying time increased. Good prediction of anthocyanins (determined by pH-differential method) and moisture (determined by oven-drying method) contained in PSPs were obtained using their optical properties through SVM models, with determination coefficients of prediction (R2p) of 0.866-0.917, and residual predictive deviation (RPD) of 2.626-3.190. These results were consistent with correlation results between optical properties and the two quality parameters, suggesting the former can be used for predicting PSP quality during drying.Chicken meat flavor has deteriorated with the increase of meat production. With the aim to identify the main aroma compounds in chicken meat, 972 Chinese local chickens are used to analyze the volatile organic compounds (VOCs) in meat by gas chromatography-mass spectrometry analysis. The results revealed that various VOCs present in the meat belong to aldehyde, alcohol and alkane classes. Total aldehyde content is highest in breeds significantly negatively correlated with the content of the other two classes, and their flavor can be distinguished by E-nose. Also, 9 common VOCs were shared by different breeds. Furthermore, principal component analysis identified hexanal and 1-octen-3-ol as the major VOCs according to the three classes, 9 common VOCs, or all VOCs as a whole in each breed, respectively. This study identified the main aroma VOCs in chicken meat, which could serve as a basis for breeding chickens with improved meat flavor.A green methodology based on pressurized liquids (PLE) to extract proteins and obtain highly active extracts from brewer's spent grain (BSG) is proposed. Box-Behnken experimental design was employed to study the effect of extraction parameters on the protein content (PC), the total phenolic content (TPC), and the antioxidant activity of extracts. Results were compared with those obtained by conventional alkaline extraction assisted with ultrasounds (UAE). The selection of PLE conditions enabled to tailor the PC and TPC of extracts. PLE extracted 36 % more proteins than UAE. PLE extracts showed higher antioxidant, cholesterol esterase inhibition, and ACE inhibitory activities than UAE extract. HPLC-MS/MS enabled to observe that the extraction technique and experimental conditions significantly affected to the kind and amount of extracted proteins, and released peptides, and phenolic compounds. A higher ratio of hydrophobic peptides was observed in PLE extracts, which justified their higher bioactivity.This research studies the application of a specific nanoemulsion as anti-Escherichia coli agent. Using a simulated gastro-intestinal digestion model, we demonstrated that α- and β-carotene from the larvae are as bioaccessible as from the fruits and vegetables they were reared on. We calculated that provitamin A carotenoid-rich larvae have the capacity to provide more vitamin A than fruits and vegetables rich in these molecules. Remarkably, the incorporation of usual quantities of these larvae in feed could cover the needs of several production animals for this vitamin. Thus, our findings suggest that rearing black soldier fly larvae on by-products or waste rich in provitamin A carotenoids could be a sustainable strategy to recycle a fraction of vitamin A back into the food chain and could represent a new approach to fight against vitamin A deficiency.Selectively hydrolyzed soy protein (SHSP) has the potential to improve the quality of steamed bread. To clarify its underlying mechanism, the influence of SHSP on dough properties and components was investigated and compared with that of soy protein isolate (SPI). The results showed that SHSP addition resulted in steamed bread with higher loaf volume, lower hardness, and higher viscoelasticity. In contrast, SPI addition had the opposite effect. Nevertheless, both soy proteins decreased melting enthalpy and increased starch particle exposure due to competition for water. By analyzing molecular weight distribution and the secondary structure, we determined that the GMP content of fermented dough decreased by 10.04% following 1% SPI addition; however, it was enhanced by 7.90% following 1% SHSP addition. Moreover, the content of β-turns decreased with SHSP addition. The present study provides a theoretical basis for the exploitation of soy proteins as a nutritious and technofunctional dough improver.
