Pomegranate seed oil (PSO) is rich in highly oxidizable bioactive conjugated linolenic acids (cLnA), limiting food applications. This study aimed to investigate the oxidative stability (room temperature for 90 days; 60 °C, for 10 days, vacuum-sealed or not), physical and morphological properties of PSO microparticles produced by complex coacervation (CC). An instant caffè latte beverage was formulated with PSO microparticles (30%) as a proof-of-application vehicle for the microparticles and physical properties were evaluated. CC was compared with spray drying. Although non-coacervated microparticles showed superior oxidative stability, coacervated microparticles were overall stable for 60 days and cLnA retention reduced 42% after γ-tocopherol exhaustion. Coacervated microparticles' structure was collapsed after 90 days. Storage under vacuum increased the oxidative stability at 60 °C. Microparticles showed high solubility and thermal stability, addition to the product promoted negligible changes in physical properties. This study brings new insights regarding cLnA stability and PSO application in food.Colletotrichum asianum (C. asianum) is a new pathogenic fungus that causes mango anthracnose. Cold plasma is a novel non-thermal decontamination technology, which has been proven to be effective in controlling postharvest fungus. Herein, dielectric barrier discharge (DBD) plasma was used to treat C. asianum spores in sterile phosphate-buffered saline, the damages in subcellular structures of C. asianum and inhibition of mango anthracnose were evaluated. Results showed that after 9 min treatment, the spore germination rate and spore viability were decreased by 95.48% and 98.82%, respectively, and the subcellular structures were damaged (P less then 0.05), leading to spores death. Besides, DBD plasma treatments could control mango anthracnose and maintain mango quality, and the disease incidence and lesion diameter of mango treated for 9 min were decreased by 48.00% and 62.95%, respectively. Therefore DBD plasma inactivated C. asianum spore, providing an alternative technique for preventing and controlling mango anthracnose.The effects of six kinds of thermal processing on soluble protein recovery, potential allergenicity, in vitro digestibility and structural characteristics of shrimp soluble proteins were evaluated. Obtained results confirmed soluble protein recovery and IgG/IgE reactivity of shrimp soluble extracts were markedly suppressed by various thermal treatments with enhanced digestibility depended on the extent and type of heating applied, which correlated well with the structural alterations and modification. The maximum reduction of IgG/IgE-binding capacity and digestive stability were observed in the autoclaved shrimps because of unfolding of protein and hydrophobic residues exposed. Notably, tropomyosin (TM) and sarcoplasmic calcium-binding protein (SCP) were still IgG/IgE-reactive in various heat-processed shrimps, even higher IgG reactivity were found in heat-treated shrimps TM according to TM antiserum western-blotting and indirect ELISA results. Shrimp TM and SCP maintains its IgE/IgG-binding capacity after various cooking methods, thus most probably initiating allergic sensitization to both raw and cooked shrimps.This study aimed to characterise pressurised hot water (PHW) extracts from nonconventional sources of functional carbohydrates and phenolic compounds in terms of antioxidant capacity, antiviral activity, toxicity, and human erythrocytes' protection antidiabetic potential. PHW extracts of Norway spruce bark (E1 + E2) and Birch sawdust (E3 + E4) contained mostly galactoglucomannan and glucuronoxylan. In contrast, samples E5 to E9 PHW extracted from Norway spruce, and Scots pine bark are rich sources of phenolic compounds. Overall, phenolic-rich extracts presented the highest inhibition of α-amylase and α-glucosidase and protection against stable non-enveloped enteroviruses. Additionally, all extracts protected human erythrocytes from hemolysis. Cell-based experiments using human cell lines (IMR90 and A549) showed extracts' non-toxicin vitroprofile. Considering the relative toxicological safety of extracts from these unconventional sources, functional carbohydrates and polyphenol-rich extracts can be obtained and further used in food models.The cocoa bean shell is a residue rich in bioactive compounds and its use as an ingredient in the food industry has been studied. This work had the objective of proposing the elaboration of chocolate cake with substitution of wheat flour by cocoa bean shell powder (CSp). Five formulations with different percentages of CSp were used 25%, 50%, 75%, 100% and 0% (control). The cakes were evaluated by technological characteristics (volume, texture profile, firmness and colour), antioxidant profile (DPPH, β-carotene/linoleic acid system, phenolic compounds, anthocyanins and tannins) and sensory tests (TDS and acceptance). The technological characteristics and antioxidant activity of the cakes were influenced by the different concentrations of CSp compared to the control sample. The cakes containing up to 75% CSp presented satisfactory sensory acceptance. Therefore, CSp has been revealed to be a prominent alternative substitute ingredient to be used promisingly in the food industry.Herein, a label-free aptasensor was designed through forming a double-stranded DNA skeleton on the glass substrate for ultrasensitive quantification of ochratoxin A (OTA) as a case study. The function fundament of the dual-responsive aptasensor was the perturbation of the vertical alignment of the liquid crystals (LCs) and intercalation of the SYBR Green I (SGI) dye molecules between the base pairs of the double-stranded DNA structure. The presence of OTA decomposed the double-stranded structure of DNA by releasing the OTA-specific aptamer from the sensing platform that induced an apparent alteration of the optical and fluorescent responses. The aptasensor specifically detected the ultra-low levels of OTA as 47.0E-9 pM (0.047 aM) and 34.0E-3 pM (34 fM) based on the polarized and fluorescent responses, respectively. The aptasensor monitored OTA in the coffee and grape drink samples. The aptasensor provides promising insight for manufacturing real-time, cost-effective, and portable sensing devices for food control usage.Probiotic fermentation suspension was used to extend the shelf life of freshly cut lotus root for the first time, which played a dual role of biological protection and quality maintenance. Fermentation suspension contained lactic acid bacteria (8-9 log CFU/mL) was prepared from juice of lotus root and used to immerse samples under atmospheric pressure and vacuum. Probiotic fermentation suspension inhibited microorganism and the activity of polyphenol oxidase (PPO), peroxidase (POD) and phenylalanine ammonia lyase (PAL), which slowed down the physiological reaction and was beneficial to maintain the color and hardness of tissues. Lactic acid bacteria antagonized other microorganisms, and metabolic acid production played a continuous role in preservation during storage. The vacuum was helpful for the fermentation suspension to be fully impregnated into samples. The probiotic fermentation suspension had a significant inhibitory effect on E.coli O157H7, and extended lotus root shelf life from 3 to 9 days.Dynamic investigation of the effects of vacuum cooling on cellular water transport and structural changes of steamed bread was carried out using transverse relaxation times (T2) and proton density-weighted images in a nuclear magnetic resonance (NMR)/magnetic resonance imaging (MRI) analyser, respectively. Initially, both steamed bread at room temperature of 25 °C and freshly steamed bread at 85 °C had three peaks of T21, T22, and T23, respectively representing the tightly bound water, loosely bound water, and free water, while an additional peak T24, was observed in freshly steamed bread at 85 °C. After vacuum cooling, freshly steamed bread at 85 °C had a higher mass loss of 10.29% due to its high initial temperature, and both samples were clearly discriminated with PCA of 88.2%, indicating that the initial food condition affected the vacuum cooling process. Lastly, the NMR/MRI technique and correlations were accurate (R2> 0.98), thus suitable for model validation at microscale and macroscale.Dissipation of an organophosphorus pesticide, trichlorfon, in natural and waxed apples during storage was studied. The results showed that the trichlorfon content in natural and waxed apples decreased by 85% and 64%, respectively, during storage. The morphology of the surface film was dense and regular, which resulted in a higher water vapor resistance and a lower respiration rate in the waxed apples. This indicates that waxing affected the dissipation of pesticide residues in the apple storage environment, increasing food safety risk. Ozone was used to remove the residual pesticides on the apple surface. The trichlorfon degradation rate reached 73%. The ozone treatment had no effect on the surface color of the apple, which means that the fruit can be pre-treated with ozone prior to waxing or storage.In this work, a novel and credible electrochemiluminescence immunoassay (ECLIA) was constructed for the ultrasensitive and highly selective detection of aflatoxin B1 (AFB1). Amino-functionalized 3D graphene hydrogel (NGH) served as the ECL platform with the self-enhanced ECL of luminol-palladium-graphene oxide (lum-Pd-GO) acting as a marker for the antibodies against AFB1. Pd-GO was synthesized by a self-redox method; it promotes the formation of reactive oxygen species, which are important to the ECL of luminol, from dissolved oxygen. The π-π conjunction between luminol and GO shortens their electron transfer distance, resulting in an amplified ECL signal (∼8.5 times larger than conventional luminol ECL). Moreover, 3D NGH, with its good conductivity, large surface area, and sufficient amino groups, was used to anchor gold nanoparticles (AuNPs), which subsequently immobilized bovine serum albumin (BSA)-AFB1 through Au-S bonds. The resultant, competitive ECLIA gave a relative low detection limit of 5 × 10-3 μg kg-1 and exhibited a broad linear relationship over the range of 0.05-50 μg kg-1. Finally, the proposed ECLIA was successfully used to analyze AFB1 contents in food samples. dimethylaminomicheliolide ECLIA electrochemiluminescence immunoassay; AFs Aflatoxins; HPLC high-performance liquid chromatography.The effect of cold plasma (CP) on phenolic compound (PC) and biogenic amine (BA) contents of red wine was investigated for the first time. The influence of CP was compared with the effects of a wine preservation using potassium metabisulfite and a combined method. The PC profile was determined by UPLC-PDA-MS/MS while BAs using DLLME-GC-MS. Chemometric analysis also was used. The content of PCs was 3.1% higher in the sample preserved by CP treatment (5 min, helium/nitrogen) compared to a sample preserved by the addition of potassium metabisulfite (100 mg/L). On a positive note, CP treatment reduced the concentration of BAs in the wine samples. The lowest BA contents were recorded after 10 min of cold plasma (helium/oxygen) treatment with the addition of potassium metabisulfite (1120.85 μg/L). The results may promote interest in CP as a potential alternative method for the preservation of wine and other alcoholic beverages.
