What is kosher salt? Simply put, it is coarse and edible salt that does not contain iodine and other additives that can interfere with the taste of foods. Contains sodium chloride
What is the difference between table salt and kosher salt? The major difference between table salt and kosher salt is its salt content. Table salt is twice as strong as kosher salt, and therefore the resulting flavor is not the same. Kosher salt is generally more coarse and doesn't have as much iodine as table salt. But kosher salt does have a distinctive flavor.
Most kosher salt is sodium chloride. best kosher salt contains 39.3 percent sodium. Although some people argue that shaker salt is saline, this is simply not true. Kosher salt contains fewer sodium chloride crystals, and thus requires more salt to reach the same level of saltiness. Sea salt and Himalayan salt have very small amounts of both of these minerals, and neither of them will significantly affect your daily sodium intake.
Is less refined than table salt
What is less refined salt? In simple terms, sea salt contains less sodium chloride than table salt. Table salt is a byproduct of mining and contains more than 99 percent sodium chloride. Sea salt is a different matter. It is created by slow evaporation in shallow ponds, then rapidly boiled over a high temperature. There are countless details involved in this process, including the iodine added to prevent clumping.
Traditionally, salt has been prized as a preservative. It draws water out of bacterial and fungal cells. The process is known as osmosis. Meats, vegetables, and fruits were once preserved by covering them with a brine solution or by coating them with whole grains of salt, which was referred to as corn. Ultimately, both methods were effective, as salt adds natural flavor to foods.
Has a more pure flavor
When it comes to salt, you'll have a choice between kosher salt and table-salt. Unlike table salt, kosher salt isn't heavily refined, meaning its crystalline structure remains flaky and natural. In comparison, table salt has been milled into a uniform, cube-like crystal structure. While table salt looks like regular cubes, kosher salt is a series of crystals randomly attached to each other. These differences in structural composition are responsible for their differing performances in cooking.
Although the difference between table salt and kosher salt may seem small, the difference is significant. For instance, table salt is finer-grained than kosher salt, so it tends to absorb more moisture than kosher salt. While it won't dissolve as easily, kosher salt is great for cooking. Baking isn't a good choice for this salt because the crystals tend to clump, making it harder to spread. However, it can add crunch to baked goods, such as focaccia or fish.
Can be used as a finishing salt
Among the varieties of specialty salts are the ones that are known as "finishing salts." Traditionally harvested by hand in particular regions, these salts are prized for their distinct textures and flavors. Whether they are moist crystals or delicate flakes, they offer a clean, mild flavor and a sharp crunch. These salts are ideal for enhancing your table setting with their unique flavors and colors. Many of them can be used as garnishes as well.
Fleur de Sel: The premier finishing salt, Fleur de Sel is often referred to as the "caviar of salts" by chefs. This salt comes from the Guerande region of the Atlantic Coast of France, where artisanal farmers called "paludiers" meticulously rake the crystals by hand. This salt is not available to everyone, and harvesting is seasonal and requires proper weather conditions.
Can be substituted for table salt
Table salt is the most common substitution for kosher sea-salt, but you may also want to use another type of salt. Sea salt has the same flavor and benefits as kosher salt, but it's less expensive and more widely available. Both types of salt are good for cooking and are available in many markets. Table salt flakes can vary in size, so you may need to adjust the amount of table salt you use in recipes. Sea salt is also a good substitute, and it's healthier than regular table salt.
In a pinch, celery salt can be substituted for kosher sea salt. Celery salt has smaller grains than kosher sea salt. Hawaiian red salt, also known as Alaea salt, is another alternative. Alaea salt contains iron oxide, which comes from volcanic clay found in Hawaii. It's not as common, but it does work as a table salt substitute.
