Ingredients;
5kg tomatoes, washed halved or large can of peeled tomatoes
500g onions, chopped
1 garlic bulb, cloves seperated and chopped
1/2cup (125ml) olive oil
1 bunch of basil , leaves torn not cut
1 whole stalk of celery, chopped
1 whole large carrot, chopped
salt and pepper
Step1: add celery, carrot, and onion to a blender and blend until smooth, add olive oil and blended mixture to a large sauce pan cook on medium high heat until slightly dry
Step2: add tomatoes and garlic mixture and cook on medium low heat and simmer for 35-40 minutes stirring frequently
Step3: salt and pepper to taste sprinkle with freshly torn basil
