Compare and Contrast
Everyone knows what an Oyster Po Boy is. The southern Louisiana born meal was created in the 1800's but was then only known as the Oyster sandwich. Typically the sandwich is known for its long white loaf style bread,piled with either shrimp or fried oyster, remoulade sauce, ;lettuce and tomatoes. The twist that was done in Contemporary Cuisine class was a Vegetarian twist on the southern classic. The same loaf style white bread was used. however instead of oyster, the class used mushroom stems.
Nutritionally, the vegetarian version of the oyster PO boy saves minimally on fat. the mushrooms are still coated then fried then wedged between a white loaf. the texture of the mushroom stem compared to the oysters are comparable. The vegetarian version is lacking nutritional value because of the missing protein
