Erzurum yöresine özgü olan cağ kebabı, genellikle kuzu eti veya oğlak eti kullanılarak yapılır. Cağ kebabı, Türk mutfağında önemli bir yere sahip olan ve özellikle Oltu ilçesiyle özdeşleşmiş bir kebaptır. Önceden terbiye edilen et, şişe geçirilerek yatay bir şekilde pişirilir ve odun ateşinde pişirilir. Bu kebap, cağ adı verilen şişlerden dolayı bu adı almıştır. Cağ kebabı, genellikle ekmek arasında servis edilir ve yoğurt ve salata gibi malzemelerle birlikte servis edilebilir.
Cağ kebabı, genellikle kuzu eti kullanılarak yapılır ve yoğurt ve baharatlarla terbiye edilir. Et, daha sonra cağ kebabına özel olan şişlerde takılarak yatay bir şekilde ateşin üzerinde çevirerek pişirilir. Domates, soğan ve biber de ocakta közleyerek hazırlanabilir. Cağ kebabı, közlenmiş sebze ve lavaş ekmeği ile birlikte servis edilebilir. Bu adımlar, cağ kebabının temel yapımı için geçerlidir.
