This Minecraft Redstone chicken mini-game is extremely weird. It's not like we're unused to seeing strange Redstone contraptions as we've witnessed MS Paint being recreated in the game because of it, and even things as cool as the Ghostbusters theme song, but it doesn't usually involve chickens like this.
Minecraft generally protects chickens, unless you're creating a factory farm to provide food. We're not criticizing you for doing it. There's no denying that chickens are cute Minecraft mob though, so it's normal to watch them navigate through a little maze as part of an activity. You'd think it was cute.
Reddit user SGHQ posted a video entitled "the somethingmachine #2". We're offering a few spoilers as the title is a hint of the viewer to speculate. It's also a wild ride. The video begins with the player putting a leash on chickens, and trapping them. From here, they get on a lift, and begin going down, dragging the chicken with them.

This is where the mini-game is in order to keep the chicken alive and stop it from being smashed or burned as you and the chicken walk down the course. It's gorgeous and it's nice to see that the first chicken gets to the bottom after such a difficult journey. The problem with this method is that even if a chicken does make it to the bottom, two arrows will be fired at the chicken. This isn't what we'd be aiming for here.
It might make more sense it were Minecraft diamonds however, we would like to see the chicken live. If you're the kind of person who wants to make your chicken immortal then take a look at how Minecraft forge 1.19 is installed.
