32oz low sodium chicken broth
2Tbsp whole peppercorns
1Tbsp kosher salt
1Tbsp dried oregano
1Tbsp smoked cumin
1 yellow onion, cut in half
1 head (12 cloves) garlic, bruised
8 bay leaves
clean and score tongue
cook 6hrs on low. remove outer skin
roughly chop, pan fry, then dice
white corn tortillas, warmed/steamed
avocado (1 per 12 tacos)
yellow onion, minced (1 per 24 tacos)
salsa verde
cilantro, chopped
