Fleur de sels are pinkish purple salt crystals from the Mediterranean region which are harvested from a type of snail commonly found in waters around Turkey, France, the coasts of the Black Sea, and the Greek Islands. The word fleur de sel actually means "sea snail" in French. This type of crystal salts is produced by a type of marine snail which grows on the ocean floor. They are tiny, about the size of sand grains, with a soft, silky, slippery exterior.
Because they are so small, they can be easily carried from one area to another. Because of this, they are commonly used as an ingredient for salves, as well as perfumes, deodorants, and skin care products such as body wash. Cools are often referred to as old salts because they have lost most of their salt content. Fine salts are slightly salty, while coarser fleur de sel is never salty at all. The difference is barely noticeable, yet it plays an important role in determining how salty a dish should be.
Fleur de sels are made from mineral salt harvested from Dead Sea's waters. As the name implies, Dead Sea salt is highly concentrated and salty. After they pass through this first stage, they are placed on a heated plate where the temperature naturally evapores much of the moisture. Because of this, the moisture is allowed to escape leaving behind large crystals of salts. As the crystal grow larger, they begin to move and eventually fall to the bottom of the tank. This process is repeated many times over until the salt is completely dry.
The crystals of fleur de sel that fall to the bottom of the tank are collected by nets and are used to make a type of salt called sea salt. Many people prefer to use this type of salt for baking and cooking purposes because of the high moisture content of the minerals in the crystal. They use this salt in a variety of cooking recipes, as well as for sprinkling their foods with a fleur de lis design on them.
