I don't know whether I would consider PvE a form of gaming that is parallel. If we stick to the traditional definition of "parallel play," I wouldn't even think of Minecraft a form of it unless you're never interacted with. If you do interact with someone, your game becomes cooperative or group play. Parallel play can be seen as a way to transition to cooperative play later on, based on what Kate Gray said. Children are still maturing beyond their individualistic natures.
I'm splitting my hair at this point, but I think we can consider "playing in parallel" and "parallel playing" as two separate concepts. The first is any game where you have the same goal or set of rules (i.e. Minecraft) and will occasionally interact when your actions align with another's. The latter is, in turn, doing the same activity, but apart with little interaction.

In the main the concept of parallel play in video games can be two players playing Minecraft on the same server, but not interacting with each other (but still seeing each other's creations). It could be you and a friend playing various video games in the same space.
