Hi today i will be talking about mansaf ,this is our favorite food in jordan but your probably wondering what even is mansaf
WHAT IS MANSAF?
It is a traditional dish from Jordan which is cooked using Jameed or plain yogurt sauce. The yogurt is combined with the broth of the Lamb that is boiled for many hours using different spices. It is served in a large serving platter .
the ingrediants you need are:
lamb shanks
onion
cold water
black peppercorns
6 or 7 cardamom pods
a few bay leaves
ghee (this is a type of clarified butter)
ready jameed (from your local store)
rice
salt
turmeric(this is a plant that we use as spice for our rice)
Almonds
Shrak bread(this is optional some poeple dont like bread in mansaf)
black pepper
almonds
parsley


Recipe:
Put the lamb shanks in a pot
add cold water to the pot
put the pot on the stove (on high heat)
When it boils drain the water completely from the lamb
cut an onion in quarters and place it in the pot
add 6 or 7 cardamom pods
and a few black peppercorns and a few leaves on top
then add a small or big tablespoon of ghee then add hot water let them boil on low heat
wait about 30 minutes the meat should be half cooked take alot of broth from the pot but leave some then add your ready jameed after that let the meat cook for an extra hour (taste it make sure its a bit salty) add it to the pot now let the lamb cook untill the jameed is fully cooked cover it with a lid but keep the lid a little open.
Now take a new pot put it on the stove add 1/4 ton of ghee let it heat up then add all your rice
add a ton of salt and a 1/4 ton of black pepper then add a pinch of tumeric give it a quick toss
Then add the broth we set aside then fill the rest with hot water cover it and let it cook

check on the lamb it will be beautiful

Take a pan and put on the stove add almonds to the ghee and saute them well

Get an antique tray put your shrak bread tear it and place it across the tray (this is optional )
put all your rice and lamb and pour the jameed from your pot on it add the almonds and add some parsley

Now enjoy the best dish in arab history
(Us arabs eat it with our hands but some people don't like to do that like me)
