Vanilla - The Second Most Expensive Spice in the World
Vanilla is the second most expensive spice in the world, largely due to the labor required to produce the bean. In the United States, a quart of vanilla extract costs upwards of $90. However, check onevanilla balance is relatively inexpensive and provides the flavor of its expensive counterpart.

To make a vanilla extract, split a vanilla bean lengthwise and then place the beans in a bottle with your alcohol of choice (a jar works just fine). Close tightly and store in a cool dark location for at least 2 weeks; 4-6 months is better, but you'll probably forget to shake it on a regular basis.

You can use any alcohol that's been approved for food use, but the best ones are bourbon or vodka. You can also add a couple of cinnamon sticks to the mix for additional flavor, but it's not essential. Vanilla extract can be used in baking, perfume making and even as a natural mosquito repellent!

The vanilla plant is a vine, and it requires a tall support to climb upon (also known as a tutor). It grows in a forest or a plantation, depending on the climate, geography and local geology. Each flower produces one pod, which is comprised of both male (anther) and female (stigma) organs that must be pollinated in order to produce seeds. However, self-pollination is blocked by a membrane that separates the male and female organs. Therefore, commercial vanilla production requires that each flower be hand pollinated by humans, which is quite time-consuming and labor intensive.

In fact, the vanilla beans are so valuable that the plant is often grown as a crop in tandem with other crops, such as coffee and cocoa. It's a highly labor-intensive crop, and if the beans are not properly tended to, they can become damaged and overripe and produce an inferior flavor.

As such, the price of vanilla has gone up and up over the years. In 2008, it hit an all-time high of $28 per kilogram, while in 2018 the price dropped to $15 per kilogram. The decline in the price of vanilla is partly due to the fact that Madagascar has been facing rising competition from Papua New Guinea.

Vanilla is a highly versatile ingredient, and it's not just the flavor that's appreciated; its aroma is intoxicating as well. In fact, vanilla's distinct smell has been linked to feelings of nostalgia, comfort, and love.
