Salade de riz aux pommes et au poivron
Ingrédients
180 ml (3/4 tasse) de riz étuvé
375 ml (1 1/2 tasse) d’eau
1 boîte de 540 ml (19 oz) de pois chiches, rincés et égouttés
1 poivron rouge, épépiné et coupé en dés
1 pomme, non pelée et coupée en dés
1 petite échalote française, hachée finement
60 ml (1/4 tasse) de persil plat ciselé
60 ml (1/4 tasse) de concentré de jus de pomme (ou de jus de pomme)
60 ml (1/4 tasse) d’huile d’olive
30 ml (2 c. à soupe) de vinaigre de cidre
15 ml (1 c. à soupe) de moutarde à l’ancienne
Sel et poivre
Préparation
1.Dans une petite casserole, déposer le riz. Ajouter l’eau et porter à ébullition. Couvrir et laisser mijoter environ 20 minutes ou jusqu’à ce que l’eau soit complètement absorbée. Rincer à l’eau froide jusqu’à ce que le riz soit tiédi. Égoutter.
2.Dans un grand bol, mélanger le riz avec le reste des ingrédients. Saler et poivrer.
3.Servir avec les filets de porc au jus de pomme (voir recette) si désiré.
