Next, cut out eight pieces of dough with a small scoop for ice cream or a cookie cutter that is 4 inches. To help the dough stick together, top the dough with a little potato starch or cornstarch. Wrap each ball of icecream into a mochi piece, then freeze until the icecream is firm.
