How to Make Darochi
Darochi is one of the easiest and most delicious Bengali desserts. It is made from khoya or mawa and has an appealing flavor to it. It is a great addition to your sweet-meat list this festive season.

The first step is to make the dal. For this, take a thick bottomed kadai and heat some coconut oil. After that add the mustard seeds, when it splutters add the jeera/cumin seeds and then the slit green chillies and thinly chopped ginger. Saute the ingredients for a few seconds till they get cooked and the raw smell is gone.

Next, put the soaked dal in a cooker with some water, salt and turmeric powder and pressure cook it until it comes to a boil. It will take about 20 to 30 minutes depending on the amount of water. Once it is done, turn the flame off and let it sit for a few minutes.

Once it cools down a little, open the cooker and check if the lentils are cooked. If they are not, add a little more water and cook them again.

Another way of cooking this dal is by using a coal. Just like in kheer making, you can use a coal to give it a smoky taste. You can use a small pot or a crock-pot to do this.

If you are not comfortable with using a coal, you can also use a smoldering piece of wood. Place the smoldering piece in the finished dal, cover it with a lid and keep the fire low to medium. The smoldering will make the dal smokier, but you can also remove it from the dal before serving and replace with some oil or ghee.

You can even garnish the dal with some finely chopped coriander leaves. The best way to eat this dal is to pour some ghee over it and serve with hot rice.

The other popular Bengali sweet is boondi laddoo. This one too is made from khoya but has an interesting twist to it. It has an additional ingredient, mawa, which gives it a different texture.

Boondi laddoo is a traditional Indian dessert that is usually eaten during festive occasions. It has a unique taste and texture that makes it quite a crowd pleaser.
