Andaliman/Chinese Prickly Ash adalah bumbu masak khas Asia yang berasal dari kulit luar buah beberapa jenis tumbuhan anggota marga Zanthoxylum (suku jeruk-jerukan, Rutaceae). Bumbu ini di Indonesia hanya dikenal untuk masakan Batak, sehingga dikenal orang luar daerah ini sebagai "merica batak". Masakan khas Batak seperti arsik dan saksang memerlukan andaliman sebagai bumbu yang tak tergantikan. Andaliman memiliki aroma jeruk yang lembut namun "menggigit" sehingga menimbulkan sensasi kelu atau mati rasa di lidah, meskipun tidak sepedas cabai atau lada. Rasa kelu di lidah ini disebabkan adanya kandungan hydroxy-alpha-sanshool pada rempah tersebut. Selain dalam masakan Batak, penggunaan Andaliman sebagai bumbu masak juga dikenal dalam masakan Asia Timur dan Asia Selatan.
Dalam bahasa Mandarin ia dikenal sebagai huājiāo (花椒; harafiah: "lada bunga"). Orang Jepang mengenalnya sebagai sanshō (山椒), sedangkan di Korea ia dikenal sebagai sanchonamu (산초나무, Z. schinifolium) atau chopinamu (초피나무, Z. piperitum). Orang Tibet, Nepal, Bhutan, dan India juga mengenal bumbu ini. Dalam bahasa Inggris nama yang paling populer adalah Sichuan pepper, dengan variasi lain adalah "Szechwan pepper," "Chinese pepper," "Japanese pepper," "aniseed pepper," "Sprice pepper," "Chinese prickly-ash," "Fagara," "sansho," "Nepal pepper," dan "Indonesian lemon pepper,".
Selain andaliman (Z. acanthopodium), dikenal pula dalam khazanah boga Indonesia beberapa kerabatnya, yaitu kayu lemah (Z. rhetsa), kembang seriawan (Z. nitidum), dan karangean (Z. avicennae). Yang terakhir ini dikenal sebagai bumbu dalam masakan Sunda.
